Provided by Martha Williams

Categories     Other Salads

Time 25m

Number Of Ingredients 10

1 (3 oz) pkg ramen noodles
1 c walnuts (chopped)
1/4 c butter
1/4 c sugar
1/4 c canola oil
2 Tbsp red wine vinegar
1/2 tsp soy sauce
8 c romaine (torn)
1/2 c green onions (finely chopped)
2 c fresh strawberries, sliced

Steps:

  • 1. Discard seasoning pack from ramen noodles. Use hammer to chop noodles into small pieces. In a large skillet, cook noodles and walnuts in butter over medium heat for 8-10 minutes or until golden brown. Cool.
  • 2. For dressing, in a bowl, whisk sugar, oil, vinegar and soy sauce. Refrigerate if not using immediately.
  • 3. Right before serving, combine romaine, onions, strawberries and cooled noodle mixture in a pretty salad bowl. Drizzle with dressing and toss gently. Serve immediately with your favorite muffins or sweet bread if using for a luncheon dish.

Tips:

- For the best flavor, use ripe and juicy strawberries. - If you don't have balsamic glaze, you can make your own by simmering balsamic vinegar in a saucepan until it thickens. - To add a bit of crunch, sprinkle some chopped walnuts or almonds on top of the salad. - If you're looking for a lighter dressing, use a citrus vinaigrette instead of the balsamic glaze. - Feel free to experiment with different types of greens, such as arugula, spinach, or mixed greens.

Conclusion:

This romaine strawberry salad is a refreshing and delicious salad that's perfect for any occasion. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a light and healthy salad, give this one a try. You won't be disappointed!
