This rich, delicious, and easy-to-make appetizer can be served warm or cool. I sometimes use grated low-fat cheese and find that it is just as tasty and less greasy. Dried parsley works, too.

RON'S ARTICHOKE AND TWO CHEESE FRITTATA

Ron's Artichoke and Two Cheese Frittata image

This is a simple and delicious breakfast or brunch dish, and looks delightful on the buffet table. Also good with diced cooked bacon and sliced mushrooms added. Note: due to the salt in the cheeses, no additional salt should be necessary in the cooking process. My picky DH and I created this for RSC #11.

Tips:

  • Choose fresh artichokes: Look for artichokes that are heavy for their size, with tightly closed leaves and no blemishes. Avoid artichokes with brown or wilted leaves.
  • Cook the artichokes properly: Artichokes can be cooked in a variety of ways, but the most common method is to boil them. To boil artichokes, bring a large pot of salted water to a boil and add the artichokes. Reduce the heat to medium-low and simmer for 20-25 minutes, or until the artichoke leaves are tender.
  • Use a good quality cheese: The type of cheese you use will greatly affect the flavor of your frittata. For a rich and creamy frittata, use a full-fat cheese like mozzarella or cheddar. For a lighter frittata, use a low-fat cheese like cottage cheese or ricotta.
  • Don't overcook the eggs: Eggs are delicate and can easily become overcooked. When cooking a frittata, cook the eggs over medium-low heat and stir them occasionally. The frittata is done when the eggs are set and the top is golden brown.

Conclusion:

The artichoke and two-cheese frittata is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover artichokes. With its creamy texture and flavorful filling, this frittata is sure to please everyone at the table.
