Rosalie is my mother-in-law. We had this at her house recently and my picky eater step kids loved it! It's simple to make and can be frozen for OAMC.

Number Of Ingredients 7

2 cups cooked chicken, cubed
2 cups pasta, uncooked (elbows, shells, etc)
1 cup celery, chopped
2 cups milk
2 cans cream of mushroom soup
4 ounces cheddar cheese, shredded
1 -2 can mixed vegetables, drained

Steps:

  • Mix chicken, pasta, celery, milk, and mushroom soup together in 13 x 9 pan. Cover and let sit in refrigerator overnight.
  • Before cooking, add mixed vegetables and cheese. Bake @ 350 degrees for one hour.
  • For OAMC: mix ingredients as above. Put in 1 ziplock for 8 servings, 2 ziplocks for 4 servings. Label and freeze.
  • Night before cooking, take out and defrost over night. Place in 13 x 9 pan (8x8 for 4 servings), add drained mixed vegetables and cheese, bake as above.

I am always looking for new ways to cook pasta that is easy and affordable. I try to avoid the canned premade soups when at all possible so I came up with this rather easy creamy sauce to change up the standard tomato sauce. The kids and hubby loved it. You can add anything you and your family likes and play around with the topping (I think a crunchy topping would taste good here too.) For the chicken I just roasted a few breast in the oven but you can use any left over or precooked you have. Also keep in mind the brand of Italian seasoning will have a different herb blend so be sure to use one you like.

2 tablespoons extra-virgin olive oil
1 onion, finely chopped
1 pinch red pepper flakes
1 teaspoon kosher salt
3 garlic cloves, minced
1 tablespoon dried Italian seasoning
1 (14 1/2 ounce) can diced tomatoes
2 (15 ounce) cans tomato sauce
1 (12 ounce) can evaporated milk
1 (8 ounce) package cream cheese, softened and cut into smeller pieces
2 cups mozzarella cheese, shredded
1 cup parmesan cheese, grated
salt and pepper, to taste
2 -3 cups chicken, cooked and shredded
1 lb spaghetti, cooked just short of al dente (can use any pasta)

Steps:

  • Preheat oven to 350 degrees and spray your 13x9 inch casserole dish with nonstick cooking spray.
  • Heat oil in a 12-inch skillet over medium-high heat. Add onion and red pepper flakes, and salt; cook until softened. Toss in the garlic and Italian seasoning and cook until fragrant, about 30 seconds to a minute.
  • Pour in the diced tomatoes and tomato sauce and bring to a boil. Reduce the heat to medium and allow gently boiling (or vigorously simmering) for 15 minutes.
  • While the sauce simmers mix the Mozzarella and Parmesan together in a bowl. Also a good time to cook your pasta.
  • Reduce heat to medium-low. Stir in the cream cheese and evaporated milk. Stir until combined well.
  • Slowly add half of the Mozzarella and Parmesan mixture while stirring (save the other half for the top.) Continue stirring or whisking until the cheese is melted in and combined. Taste to check for seasoning and add in salt and pepper to suit your taste.
  • Add the chicken and pasta to the sauce and toss (or stir) to coat completely with the sauce. Pour the entire mixture into the prepare casserole dish. Use a spoon to flatten it down into the dish.
  • Sprinkle the top with the remaining cheese. Place the casserole into the preheated oven and cook for 30 minutes.
  • After the cook time allow to sit for 5-10 minutes before servining.

I just had the pleasure of having two guests for lunch all the way from Holland and dedicate this recipe to them - It is a do ahead casserole - just pop it in the oven 30 minutes before serving - Watch you don't leave it longer you don't want it to get too dry. This is a one dish meal, serve with a green salad & crusty roll lovely for lunch or dinner The 1 hour cooking time includes the time to brown & cook the chicken and precook the veggies. Everything in the casserole is precooked so you only have to heat it through before serving.

4 1/2 boneless skinless chicken breasts, cut into 1-inch pices
1 1/2 cups fresh mushrooms, sliced
1 cup onion, chopped
1/2 cup sweet green pepper, chopped
1/2 cup sweet red pepper, chopped
3/4 cup thin sliced carrot
1/2 cup frozen peas
1 (8 ounce) can water chestnuts, sliced, drained
1 stalk celery, chopped
salt & pepper
1 teaspoon garlic powder

1 cup cheddar cheese, shredded (I like aged)
1 cup mozzarella cheese, shredded

Steps:

  • Salt & Pepper the chicken cubes and brown in a very lightly oiled skillet, turn heat to low and continue cooking until the chicken is no longer pink, remove from skillet and place in a large bowl.
  • Add mushrooms, onions to the skillet cook until the onions are translucent, add to the chicken in the bowl.
  • Lightly saute the peppers and carrot slices add to the bowl with the mushrooms & chicken.
  • Add frozen peas, celery & waterchestnuts to the bowl.
  • Mix the garlic powder, chili flakes to gether and sprinkle into the bowl.
  • Add the un diluted soup and gently mix the ingredients.
  • Add the pasta slowly incorporating it well with the sauce, chicken & veggies Pour into a 9" x 14" X3" lightly greased casserole dish or line the casserole with non stick foil.
  • You may now cover it and hold in the fridge overnight or for a few hours or bake it right away,.
  • Add cheese to the top just before putting it into the oven Bake uncovered.
  • 375F oven for 30 minutes.

I like to use a store-bought roasted chicken and an assorted bag of pasta that has penne, spirals, bowties and shells!! This recipe also works well with tortellini! 2 cups tri-colored pasta, cooked and drained
2 cups rotisserie-cooked chicken, shredded
1 cup caesar salad dressing, Creamy Style
1/2 cup chicken broth
1/3 cup green onion, finely sliced
1/4 cup red bell pepper, diced
1 1/2 cups Italian cheese blend, shredded
1 cup crouton (I use my Parmesan Garlic Croutons!)
1/4 cup parmesan cheese, shredded

5 cups uncooked egg noodles
1/2 cup grated Parmesan cheese
1 large egg, lightly beaten
1 tablespoon garlic powder
1-1/4 teaspoons pepper, divided
1 pound chicken tenderloins
1 medium onion, sliced
2 celery ribs, chopped
3 tablespoons butter
1-3/4 cups half-and-half cream, divided
2 cups shredded part-skim mozzarella cheese
1 can (10-3/4 ounces) condensed cream of celery soup, undiluted
1/2 cup white wine or chicken broth
1 tablespoon dried parsley flakes

Steps:

  • Cook noodles according to package directions. Meanwhile, in a large bowl, combine the Parmesan cheese, egg, garlic powder and 1 teaspoon pepper; set aside. Drain noodles and rinse in cold water; add to egg mixture. Set aside., In a large skillet, cook the chicken, onion, celery and remaining pepper in butter over medium heat for 12-15 minutes or until chicken is no longer pink. Stir in 1/2 cup cream; heat through., In a greased 13x9-in. baking dish, layer half of the noodle mixture, chicken mixture and mozzarella cheese. Repeat layers. Combine the soup, wine, parsley and remaining cream; pour over top. Cover and refrigerate overnight., Remove from the refrigerator 30 minutes before baking. Cover and bake at 350° for 40 minutes. Bake, uncovered, for 15-20 minutes longer or until bubbly and cheese is melted., Or before refrigerating, cover and freeze casserole for up to 3 months., To use frozen casserole: Thaw in the refrigerator overnight. This is a family favorite. Sometimes I substitute chickpeas or other beans for the kidney beans. I suppose if you like ground beef, you could substitute ground beef for the kidney beans as well. If you love cheese, by all means, use more ... if I've got enough I do!

3 garlic cloves
1 onion
1 green pepper
1 teaspoon cumin
2 teaspoons chili
2 tablespoons flour
1 (28 ounce) can tomatoes
3 cups cooked kidney beans
salt and pepper
2 beaten eggs
3/4 cup milk
6 tablespoons oil
1 cup cornmeal
1 teaspoon salt
1 teaspoon baking soda
2 cups corn
2 cups cheddar cheese

Steps:

  • Saute garlic, onion and green peppers in oil.
  • Add cumin and chili. Cook for 2 minutues.
  • Add flour. Cook for 1 minute.
  • Add tomatoes and kidney beans. Add salt and pepper to taste. Simmer for 20 minutes or longer. (Sometimes I'll simmer it for longer. The flavour is better the longer you simmer it.).
  • While the tomato mixture is simmering, make the cornbread mixture.
  • Mix together the eggs, mild and oil.
  • Add the cornmeal, salt and baking soda. Mix.
  • Add the corn. Mix.
  • Grease/spray 9 x 13 pan.
  • Pour 2/3 cup cornmeal mixture into the bottom of the pan.
  • Sprinkle 1 1/2 cups of cheddar cheese on top of the cornmeal mixture.
  • Pour tomato mixture on top of cheese.
  • Spoon the rest of the cornmeal mixture around the outer edges of the pan, on top of the tomato mixture.
  • Sprinkle remaining cheese in the middle of the pan, on top of tomato mixture.
  • Bake at 350°F for 45 minutes.
  • Let rest for 10 minutes before serving.
