ROSSI'S SAUSAGE GNOCCHI

My husband and I love to cook together, this is one of the recipes that we created.

Number Of Ingredients 14

1 tablespoon olive oil
1 pound Italian sausage links
1 tablespoon olive oil
½ cup onion, chopped
1 tablespoon minced garlic
1 ½ teaspoons Italian seasoning
1 (14 ounce) can crushed tomatoes
2 tablespoons water
¼ teaspoon salt
1 teaspoon white sugar
1 tablespoon Italian seasoning
1 (1 pound) package fresh gnocchi
chopped fresh flat-leaf parsley, for garnish
grated Romano or Parmesan cheese

Steps:

  • Heat 1 tablespoon olive oil in a skillet over medium heat. Add sausages and cook until browned and firm, about 10 minutes. Cut sausages into 1/2 inch slices, return to the skillet, and continue cooking until no longer pink. Drain sausage slices on a paper towel lined plate.
  • Meanwhile, heat 1 tablespoon olive oil in a saucepan over medium heat; stir in onion and cook until the onion softens and turns translucent, about 5 minutes. Add garlic and 1 1/2 teaspoons Italian seasoning; cook until the garlic softens, about 2 minutes. Pour in crushed tomatoes, water, salt, sugar, and remaining 1 tablespoon Italian seasoning. Bring to a simmer, then reduce heat to medium-low, cover, and simmer for 20 minutes.
  • Bring a large pot of lightly salted water to a boil. Add gnocchi and cook for 2 to 3 minutes until pasta floats; drain.
  • Meanwhile, stir Italian sausage slices into sauce to rewarm. Toss pasta with sauce, and sprinkle with chopped parsley and grated Romano cheese to serve.

1 Tablespoon olive oil
1 onion (chopped)
2 garlic cloves (minced)
1 pound pre-cooked smoked turkey sausage (sliced (like a coin))
1 zucchini (diced)
¼ cup water
14½ ounces Italian Diced Tomatoes (1 can, undrained)
1 Tablespoon dried oregano
1 Tablespoon parsley
½ teaspoon garlic powder
salt and pepper (to taste)
15 ounces cannellini beans (1 can, rinsed and drained)
16 ounces gnocchi (uncooked,1 package)
1½ cups fresh spinach
½ cup freshly grated mozzarella cheese
¼ cup freshly grated Parmesan cheese
fresh parsley (for garnish)

Steps:

  • Preheat oven to 425 degrees.
  • Heat oil in a large oven-safe skillet over medium-high heat. Add onion and saute for 4-5 minutes, then add garlic and cook for an additional minute.
  • Add the cut sausage to skillet and cook for 3-4 minutes or until sausage is lightly browned, stirring occasionally.
  • Add zucchini, water, tomatoes, oregano, parsley, garlic powder, salt, pepper, beans and gnocchi. Mix well. Gently fold in the spinach.
  • Top with mozzarella and Parmesan cheese, then place in the oven for 15-20 minutes. Remove from oven, top with parsley, and serve.

Number Of Ingredients 11

1 package (16 ounces) potato gnocchi
2 tablespoons olive oil
1 package (12 ounces) fully cooked Italian chicken sausage links, halved and sliced
2 shallots, finely chopped
2 garlic cloves, minced
1 cup white wine or chicken broth
1 tablespoon cornstarch
1/2 cup reduced-sodium chicken broth
3 cups fresh baby spinach
1/2 cup heavy whipping cream
1/4 cup shredded Parmesan cheese

Steps:

  • Cook gnocchi according to package directions. Meanwhile, in a large skillet, heat oil over medium-high heat; cook sausage and shallots until sausage is browned and shallots are tender. Add garlic; cook 1 minute longer., Stir in wine. Bring to a boil; cook until liquid is reduced by half, 3-4 minutes. In a small bowl, mix cornstarch and broth until smooth; stir into sausage mixture. Return to a boil, stirring constantly; cook and stir until thickened, 1-2 minutes. Add spinach and cream; cook and stir until spinach is wilted., Drain gnocchi; add to pan and heat through. Sprinkle with cheese.
