ROUND STEAK STROGANOFF
I found this recipe years ago in an old Taste of Home cookbook. It is the only recipe I use for stroganoff. " The thinner you slice the round steak, the quicker the meat will cook and become tender. After the sour cream is added, do not boil the mixture or it will curdle"--Brenda Read (name printed on recipe)

Steps:
- In large pot, prepare egg noodles according to directions of package.
- Heat large skillet over medium heat.
- Add bacon and cook until lightly crispy.
- Add garlic and onion. Saute for 2 minutes.
- Add round steak, paprika, salt, pepper. Cook until meat is lightly brown on the outside. Do not over- cook because it could make the meat tough.
- Add cream of mushroom soup and 1 can of water. Mix well, bring to a boil.
- Once boiling, reduce heat to low, cover and simmer for 30 minutes. (Stirring occasionally).
- Remove from heat and stir in sour cream.
- Pour mixture over cooked egg noodles and serve while hot.
- Note: May add additional salt and pepper to taste. I like mine with a lot of pepper.
Tips:
- To tenderize round steak for stroganoff, it is recommended to slice it against the grain in thin strips and marinate it in a mixture of Worcestershire sauce, soy sauce, garlic, and olive oil for at least 30 minutes before cooking. This helps to break down the tough fibers and enhance the flavor.
- For a creamy and flavorful stroganoff sauce, use a combination of dairy products such as sour cream, heavy cream, and cream cheese. These ingredients add richness and tanginess to the dish.
- To prevent the sauce from curdling, it is important to temper the dairy products by slowly whisking them into the hot pan with the beef broth. This helps to prevent the proteins in the dairy from coagulating and separating.
- To add depth of flavor to the stroganoff, consider using a variety of mushrooms such as cremini, shiitake, or oyster mushrooms. Sautéing the mushrooms with butter or olive oil until they are golden brown and fragrant enhances their taste and texture.
- For a more colorful and nutritious stroganoff, add a variety of vegetables such as bell peppers, onions, carrots, or asparagus. These vegetables add a vibrant touch to the dish and provide additional vitamins and minerals.
