This has become a classic at our house. Sometimes I brown sausage and hamburger to add to it for meat suace or if I don't get lazy I make meatballs. We often freeze the leftover suace for quick weekday meals.

1/4 cup olive oil
2 medium onions, diced
1 green pepper, diced
4 cloves garlic, minced or crushed
1 (16 ounce) can tomato paste
2 (46 ounce) cans tomato juice
1 teaspoon salt
1 teaspoon pepper
3 tablespoons oregano
3 tablespoons basil
1 teaspoon marjoram
1/8 teaspoon crushed red pepper flakes
1/16 teaspoon rosemary
3 tablespoons finely chopped fresh parsley
1 lb sliced fresh mushrooms
3 tablespoons brown sugar
2 (14 1/2 ounce) cans whole tomatoes

Steps:

  • In a large stock pan, saute onions, garlic, and green peppers in the olive oil until the onions are translucent.
  • Add oregano, marjoram, basil, rosemary and crushed red peppers.
  • Saute a few minutes longer.
  • Add tomatoe juice and bring to a boil.
  • Reduce heat to low and add the brown sugar.
  • Squeeze the whole tomatoes through your hand when adding to the pot and add the juice from the can to the pot also.
  • Add the remaining ingredients.
  • Simmer at least 3 hours The longer the better I usually start it in the morning and simmer all day.

This recipe was developed by my Father and Aunt in the late 60's for Dad's restaurant. Dad had people coming from surrounding counties to get his Barbecue Beef Sandwiches. Mix it with shredded beef or pork. Add it to your favorite baked bean recipe for a truly fantastic flavor. Any left over sauce can be frozen.

1/2 cup vinegar
56 ounces catsup
24 ounces chili sauce
2 stalks celery, finely diced
2 green peppers, diced
2 medium onions, diced
4 teaspoons chili powder
1 tablespoon crushed red pepper flakes
2 tablespoons liquid smoke
2 tablespoons Worcestershire sauce
1 tablespoon frank louisiana hot sauce
1 1/2 teaspoons allspice
1 1/2 teaspoons ground cloves
2 teaspoons cinnamon
1 teaspoon pepper
1 teaspoon salt
1/2 cup sugar
1/2 lb brown sugar
2 teaspoons paprika

Steps:

  • Mix all ingredients and simmer all day or until onions and peppers are tender stirring frequently.
  • The longer the better.

1 (15 ounce) can tomato sauce
15 ounces ketchup
1 onion, chopped
2 teaspoons prepared mustard

1 teaspoon Worcestershire sauce
2 ounces sugar
1 ounce salt

10 lbs ground beef round
2 cups vinegar
48 ounces catsup
48 ounces tomato sauce
48 ounces tomato paste
8 tablespoons prepared mustard
1 1/2 cups sugar
1/2 cup salt
1/4 cup liquid smoke
1/4 cup Worcestershire sauce
5 lbs onions, chopped (6 large)
4 tablespoons chili powder
4 tablespoons crushed red pepper flakes
1 -2 cup water, if necessary for thinning

Steps:

  • Mix all ingredients and cook over low heat for 6 hours. Stir frequenly.
  • The longer you cook it, the darker and richer it becomes.

2 -3 lbs venison, bone and cubed into bite sized pieces
1/4 cup cooking oil
2 medium onions, diced
1/2 cup water
2 large green peppers
1 cup tomato sauce
salt
pepper
1/2 teaspoon garlic powder
1 teaspoon oregano
1/4 teaspoon fennel seed
1/2 teaspoon hickory smoke salt
cooked rice

Steps:

  • Heat 1/4 cup oil in skillet and brown meat on all sides.
  • Remove meat from skillet to a large bowl.
  • Add onions and peppers to skillet and saute.
  • Add the to bowl with meat.
  • Add water to pan and stir while bringing to a boil to gather the juices.
  • Pour water into the bowl.
  • Add tomatoes sauce and remaining ingredients to skillet and cook for 5-8 minutes.
  • Do not boil.
  • Add to bowl.
  • Pour contents of the bowl into skillet and cook fo 5 min or until thoroughly heated stirring constantly.
  • Serve over rice.

6 ounces uncooked thin spaghetti
1 teaspoon dried oregano
1 garlic clove, minced
2 teaspoons olive oil
3 cups chopped seeded plum tomatoes
1/2 cup sliced green onions
1/4 cup minced fresh parsley, divided
2 tablespoons minced fresh basil
2 tablespoons lemon juice
1 cup (4 ounces) crumbled feta cheese, divided
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook pasta according to package directions. In a nonstick skillet, saute oregano and garlic in oil for 1 minute or until garlic is tender.
