On Sunday nights, I was famous for making fried okra and creamed corn sandwiches with fresh slices of tomato and loads of Duke's mayonnaise. Years later, while studying in Italy, I realized that Italians also took leftover vegetables and made sandwiches. All you need are cold vegetables, bread, and mayo. The Caesar salad treatment makes this lighter than a sandwich, although if you want to give it more heft, you can add shrimp, chicken, or duck.

2 cups Fried Okra
2 heads romaine lettuce, leaves separated
1 cup cooked fresh corn kernels, chilled

Steps:

  • For the salad:
  • Place half the fried okra in a large bowl and add the romaine, corn, corn bread, tomatoes, cucumber, and onion. Add the dressing and toss until well coated.

  • For the Creole Caesar dressing:
  • In a small saucepan, combine the oil, garlic, and onion. Cook over low heat until the garlic and onion are golden and tender, about 15 minutes. Using a slotted spoon, transfer the garlic and onion to a food processor; reserve the oil.

  • Combine garlic and oil in a small saucepan. Simmer until cloves are a light gold color, about 15 minutes. Pour oil through a fine sieve, squeeze all juice from cloves, and then discard the solids. Set garlic oil aside.
  • Preheat oven to 300 degrees F (150 degrees C). Lightly oil a baking sheet.

Steps:

  • Make the croutons:
  • Heat the oven to 350 degrees F.
  • Hand-tear the bread into small pieces and put them into a bowl. Add the olive oil, Parmesan, and thyme leaves; season with salt and pepper. Mix this well to combine all the flavors. Spread the cubes out onto a baking sheet and bake until they are golden brown, about 15 minutes. Let them cool before tossing them onto the salad.
  • Make the dressing: Put the anchovies, garlic, lemon juice, and water into a blender and process for 30 seconds until the mixture is smooth. 2 large eggs, lightly beaten
8 tablespoons unsalted butter, melted, plus 1 tablespoon for greasing the pan
1 1/2 tablespoons Dijon mustard
2 large cloves garlic, grated
Kosher salt and coarsely ground black pepper
1/2 cup lemon juice
1 tablespoon caper juice
2/3 cup olive oil
1/3 cup canola oil
3 anchovy fillets, finely chopped, plus 1/2 teaspoon anchovy oil, optional

3 heads romaine, outer leaves discarded, washed, dried and cut into 1-inch pieces

Steps:

  • For the cornbread: Preheat the oven to 400 degrees F.
  • Whisk together the cornmeal, flour, sugar, baking powder, salt and baking soda in a large bowl. Whisk in the buttermilk, milk and eggs. Whisk in the melted butter.
  • Coat the sides and bottom of a 9-inch skillet with the remaining butter. Pour the batter into the skillet and bake until the center is firm and a cake tester or toothpick inserted in the center comes out clean, 20 to 25 minutes. Let cool. Cut half of the cornbread into cubes. (Devour the other half with butter and jam.)
  • For the dressing: Combine the mustard, garlic, a pinch salt and about 1 teaspoon coarsely ground pepper in a food processor. Pulse to blend. With the machine running, pour the lemon juice and caper juice into the mix. Slowly pour in the olive oil and then the canola oil. Transfer the dressing to a bowl. Taste for seasoning. Too lemony? Add more oil. Too oily, add more lemon. Stir in the anchovies, anchovy oil and a few tablespoons grated Parmesan. Refrigerate. (See Cook's Note.)
  • For the salad: Preheat the oven to 375 degrees F.
  • Spread the cornbread cubes on a baking sheet and bake until browned and toasty, 10 to 12 minutes.
  • Add about three quarters of the dressing to a large bowl and toss the romaine with the dressing. Grate some Parmesan over the leaves. Use a tea strainer or sifter to sprinkle the pancetta with an even, light layer of the cayenne. Top with salad with the pancetta and warm cornbread croutons and serve immediately.

Number Of Ingredients 12

1 1/4 pounds bone-in, skin-on chicken breasts or thighs
Kosher salt and black pepper
6 tablespoons olive oil, plus more as needed
4 anchovy fillets, plus more if you like
1/4 loaf of crusty bread, torn into 1-inch pieces (about 2 cups)
1 garlic clove, finely grated
1/4 cup fresh lemon juice, plus more as needed
1 tablespoon soy sauce
1 large head escarole or 2 heads romaine lettuce, torn into large pieces
1 cup parsley, tender leaves and stems
Pecorino or Parmesan, for shaving
4 large egg yolks (optional)

Steps:

  • Heat oven to 375 degrees. Season chicken with salt and pepper. Heat 1 tablespoon olive oil in a large skillet (preferably cast-iron) over medium-high heat.
  • Add chicken, skin-side down, and cook without moving until the pieces are golden brown and crispy, 5 to 8 minutes. Flip the chicken and continue to cook until well browned on the other side, another 5 to 8 minutes.
  • Move the chicken to one side of the skillet and tilt the skillet a little so that the fat and drippings pool on one side. Add the anchovies and let them sizzle a bit to melt down. Add the croutons, along with 2 tablespoons olive oil. Season with salt and pepper and toss them to coat in the anchovy-chicken fat.
  • Place the skillet in the oven and roast until the chicken is cooked through and croutons are golden brown and crispy, 12 to 15 minutes.
  • Meanwhile, whisk the grated garlic, lemon juice and soy sauce in a small bowl and season with salt and pepper.
  • Place escarole and parsley in a large bowl or on a platter and dress with lemon-garlic mixture. Season with salt, pepper and more lemon juice if you like. Drizzle with remaining 2 tablespoons olive oil and shave some pecorino over the whole thing.
  • Remove the chicken from the oven and let it rest a minute or two. Cut the meat off the bone and thinly slice. Place on top of the salad, along with the croutons. Top each serving with an egg yolk, if using, and more anchovies, if you like.

1 cup finely chopped onion
3 cloves garlic, finely chopped
1 cup white wine
3 1/2 cups water
1 cup white cornmeal, plus 1 cup for dredging the croutons
Salt and freshly ground pepper
3 cups canola oil
1 cup grated Parmesan cheese
1 cup grated Asiago cheese
1 tablespoon flour
1 tablespoon mayonnaise
1 teaspoon Dijon mustard
Salt and freshly ground pepper
1 teaspoon pureed canned chipotles
Few dashes Worcestershire
Few drops hot pepper sauce
1/4 cup red wine vinegar
1 teaspoon capers
4 anchovy fillets
8 cloves garlic, roasted
3/4 cups olive oil
5 cups romaine lettuce, torn into bite sized pieces
4 (1 1/2-inch) thick center-cut loin pork chops, with bone
Salt and pepper
Olive oil
4 cloves garlic, finely chopped

1 cup dry white wine
1 cup chicken stock
1 teaspoon Dijon mustard
1 teaspoon coarse-grained mustard
1 tablespoon finely chopped fresh thyme

Steps:

  • Hominy Croutons:
  • Heat oil in a small saute pan. Cook onions and garlic until soft. Add wine and reduce by half. Place the water in a medium saucepan and add 2 tablespoons of salt, bring to a boil. Slowly whisk in the cornmeal and cook for, 15 to 20 minutes. Season with salt and pepper and spread into a buttered 11 by 17 inch baking sheet. Chill in the refrigerator for at least 1 hour. Heat the oil in a cast iron skillet or a deep fry to 350 degrees F. Cut the polenta into 1/2-inch squares. Dredge lightly in cornmeal and fry in batches until golden brown.
  • Parmesan Crisps:
  • Heat a large saute pan over medium heat. Combine the cheese and flour in a medium bowl. Sprinkle 2 tablespoons of the cheese into the pan to form a 4-inch circle. Cook until the cheese is somewhat melted but not firm. Using a spatula, turn the cheese over and cook until firm. Drape the crisp over a large rolling pin until cool. Repeat.
  • Salad:
  • Put all ingredients except oil in a blender and blend until smooth. Slowly add the oil and season with salt and pepper. Place the romaine in a large bowl and toss with some of the dressing. Divide among 4 plates. Scatter croutons around and place a Parmesan crisp in the center of the salad.
  • Pork:
  • Season pork with salt and pepper on both sides. Heat a few tablespoons of oil in a large saute pan until almost smoking. Cook the pork for 3 to 4 minutes on 1 side or until golden brown, turn over, reduce heat to medium and continue cooking to medium doneness. Remove to a plate and keep warm. Pour off all but 2 tablespoons of the fat. Add the garlic and onions and cook until soft. Add the wine and cook until reduced by half. Add the stock and cook to a sauce consistency. Whisk in the mustards and thyme and season with salt and pepper to taste.

5 anchovy fillets, finely chopped
3 garlic cloves, pressed
1/2 cup extra-virgin olive oil
3 cups 3/4-inch cubes crustless country bread
1 cup (packed) coarsely grated Gruyère cheese (about 4 ounces), divided
Nonstick vegetable oil spray
1 bunch mustard greens (about 12 ounces), center rib and stem cut from each leaf, leaves cut crosswise into 1/2-inch-wide strips
5 teaspoons (or more) fresh lemon juice

Steps:

  • Preheat oven to 375°F. Combine anchovies and garlic in small bowl. Gradually whisk in oil. Place bread cubes in medium bowl. Drizzle 2 tablespoons anchovy oil over, tossing to coat. Sprinkle bread with salt, pepper, and half of cheese; toss to coat.
  • Spray rimmed baking sheet with nonstick spray. Scatter bread on sheet. Bake croutons until crisp and golden, stirring occasionally, about 20 minutes. Set aside.
  • Measure 8 cups (loosely packed) mustard greens and place in large bowl (reserve any remaining greens for another use). Add croutons and remaining cheese to bowl. Whisk 5 teaspoons lemon juice into remaining anchovy oil; season dressing with salt, pepper, and more lemon juice, if desired. Add dressing to salad; toss to coat.

Lime Mango Dressing:
½ cup coarsely chopped ripe mango
¼ cup fresh lime juice
¼ cup dry sake
2 tablespoons champagne vinegar
1 teaspoon minced seeded bird's-eye chile
½ teaspoon kosher salt
¼ cup canola oil
Salad:
3 pounds seedless watermelon, peel left on, cut into 1-inch-thick slabs
Olive oil
Kosher salt
½ cup hulled pumpkin seeds
¼ teaspoon ground cayenne
1 teaspoon sugar
4 cups 1-inch cubes homemade or store-bought cornbread
2 tablespoons unsalted butter, melted
8 fresh shiso leaves, shredded (or Thai basil or mint)
½ cup dates, pitted and chopped
1 serrano chile, sliced into rings
Freshly ground black pepper
½ cup ricotta or mascarpone

Steps:

  • For the dressing:
  • Put all of the ingredients except the oil in a blender. Blend on high. After the ingredients are blended, slowly add the oil and continue to blend until the mixture is thickened and emulsified. (Makes 1 cup.)
  • For the salad:
  • Heat a grill pan to medium-high heat. Drizzle the watermelon slices with just enough oil to thinly coat and place them on the hot grill.
  • Grill each side of the watermelon slices for about 2 minutes, until charred. Transfer to a plate and season with salt.
  • Remove the rind and dice the grilled watermelon into large cubes.
  • Preheat the oven to 350°F. Toss the pumpkin seeds with the cayenne, sugar, and 2 teaspoons oil and place on a small baking sheet. Roast for 6 to 10 minutes, until golden.
  • Brush the cornbread cubes with the melted butter and place in a single layer on a baking sheet. Put in the oven along with the pumpkin seeds and bake for 10 minutes, turning halfway with a flexible spatula. Remove from the oven when the croutons are toasted and golden.
  • Toss the watermelon, shiso, dates, and chile in the bowl with ¼ cup Lime Mango Dressing (reserve remaining dressing for another use). Taste and adjust the seasoning with salt and pepper. Add the cornbread croutons and toss very gently to combine without breaking the croutons. Spoon the salad onto a large platter and garnish with the pumpkin seeds and cheese.

1/2 head garlic, peeled
1 cup extra virgin olive oil
3/4 lb loaf sourdough bread, cubed
1 cup ghee

Steps:

  • Combine garlic and oil in a small saucepan.
  • Simmer until cloves are a light gold color, about 15 minutes.
  • Pour oil through a fine sieve, squeeze all juice from cloves, and then discard the solids.
  • Set garlic oil aside.
  • Preheat oven to 300 degrees F (150 degrees C).
  • Lightly oil a baking sheet.
  • Arrange bread cubes in a single layer on baking sheet.
  • Bake, turning bread cubes periodically, until lightly browned, about 20 minutes.
  • In a large, non-stick skillet, melt 1/3 cup ghee with 1/3 cup garlic oil over medium heat.
  • Cook toasted bread cubes in batches until light to medium golden brown, turning frequently.
  • Add more ghee and garlic oil as needed.
  • Turn out into basket lined with paper towels, and drain for about 20 minutes.
  • Note: For other uses- garden salad, soup, etcetera- you can add dried herbs of your choice, but if you do, don't use them with a Caesar salad -- too many flavour contrasts.

Tips:

  • Use stale bread: Stale bread is less likely to fall apart in the salad dressing. If you don't have any stale bread on hand, you can dry out fresh bread cubes in the oven at a low temperature.
