From 1930's cookbook, Neligh Ne; she says spices may be used instead of cocoa but no amounts given. End of the month? Have no eggs or oil? This hand beaten little cake will save you (lol). This could be a cake your kids make.

SALAD DRESSING CHOCOLATE CAKE WITH EASY SHORTENING ICING

Salad Dressing Chocolate Cake With Easy Shortening Icing image

This recipe has been in my family forever. I grew up on it and has always been my favorite. It came from the time when eggs were not readily available. People are put off by the idea of "salad dressing" or Miracle Whip in a cake, but it is so moist and delicious! I tend to make this in two 9" round pans.

Tips:

  • Use high-quality chocolate. The better the chocolate, the better the cake will be. Look for chocolate with a cocoa content of at least 70%.
  • Do not overmix the batter. Overmixing will make the cake tough. Mix just until the ingredients are combined.
  • Bake the cake at the correct temperature. The cake should be baked at 350 degrees Fahrenheit for 30-35 minutes, or until a toothpick inserted into the center comes out clean.
  • Let the cake cool completely before frosting. This will help to prevent the frosting from melting.
  • Use a chocolate ganache or frosting. This will help to enhance the chocolate flavor of the cake.
