SPINACH SALAD DRESSING
My ex-wife developed this recipe about 30 years ago, but it has been modified many times over the years due to changing tastes and the availability of ingredients. Decrease olive oil by half, and increase spices and hot sauce to make a great marinade for grilling meat and veggies. Prep time does not include time for designing and building your salad... just for making the dressing.

DRESSING FOR SPINACH SALAD
While I sometimes mix up the ingredients in my spinach salad to accommodate what is on hand and fresh, I always use the same dressing. This is a real favorite for us. I usually use fresh baby spinach, diced red onion, sliced strawberries and pecans in my salad. I sometimes swap out sliced kiwi or even mandarin oranges for the strawberries. Enjoy!

Tips:
- Choose the right greens. Baby spinach is a classic choice for spinach salads, but you can also use other types of greens, such as arugula, kale, or mixed greens.
- Add some sweetness. Fresh fruit, such as berries or citrus, can help to balance out the bitterness of the greens. You can also add a drizzle of honey or maple syrup.
- Don't be afraid to add some crunch. Nuts, seeds, and croutons can add a nice textural contrast to the salad.
- Make a flavorful dressing. A simple vinaigrette is a good option, but you can also try a creamy dressing or a tangy citrus dressing.
- Serve the salad immediately. Spinach salads are best enjoyed fresh, so don't make them too far in advance.
