Time 45m

Yield 2

Number Of Ingredients 12

6 slices bacon, cut crosswise into 1/2-inch pieces
2 ears white corn
¼ cup chopped green onions - white and light green parts separated from green tops
¼ cup diced red bell pepper
salt and ground black pepper to taste
1 pinch cayenne pepper, or to taste
2 teaspoons olive oil
1 tablespoon rice vinegar, or more to taste
½ teaspoon vegetable oil
2 (8 ounce) center-cut boneless salmon fillets
1 pinch cayenne pepper, or to taste
1 cup fresh spinach leaves

Steps:

  • Preheat an outdoor grill (preferably charcoal) for high heat and lightly oil the grate.
  • Place bacon in a skillet over medium heat and cook until browned and crisp, 8 to 10 minutes.
  • Cut kernels from corn ears into a large bowl using a sharp knife held at a 45-degree angle. Scrape cobs with the back of the knife into the bowl to get the juices.
  • Stir white and light green parts of green onions into bacon and add red bell pepper; cook and stir until vegetables just start to become tender, about 2 minutes. Stir corn into bacon mixture and let corn just warm through. Season with salt, black pepper, cayenne pepper, a few chopped dark green onion tops, olive oil, and rice vinegar. Turn off heat under relish.
  • Spread vegetable oil onto both sides of salmon fillets and season fish with salt, black pepper, and cayenne pepper.
  • Cook on preheated grill until fish shows good grill marks, the flesh flakes easily, and fish is still slightly pink in the center, about 5 minutes per side. A crack that opens up in the salmon flesh as you cook will let you see how done the salmon is in the middle.
  • Divide spinach leaves onto 2 plates and top each with a salmon fillet and half the bacon relish. Sprinkle on a few green onion tops for garnish.

Number Of Ingredients 17

2 cans (7 1/2 ounces each) salmon, drained
1/2 cup finely diced onion
1/2 cup finely diced celery
1/2 cup corn kernels, canned or frozen (thawed, if frozen)
Salt and freshly ground black pepper, to taste
1/2 cup mayonnaise
1 tablespoon Dijon mustard
1 teaspoon drained pickle relish
1 teaspoon fresh lemon juice
1/2 teaspoon Worcestershire sauce
1/4 teaspoon paprika
2 dashes Tabasco sauce
1 egg
1 1/2 cups crushed cracker crumbs (preferably saltines)
2 tablespoons unsalted butter
2 tablespoons corn oil
Light Lemon Yogurt Sauce , for serving

Steps:

  • 1. Carefully flake the salmon into a bowl, discarding any small bones, cartilage, and skin. Add the onion, celery, corn, salt, and pepper. Fold together with a rubber spatula. Set aside.
  • 2. In another bowl, combine the mayonnaise, mustard, pickle relish, lemon juice, Worcestershire sauce, paprika, and Tabasco sauce. Fold these ingredients into the salmon mixture.
  • 3. Lightly beat the egg. Using the rubber spatula, fold into the salmon mixture along with 1/2 cup of the cracker crumbs. Place the remaining cup of cracker crumbs on a dinner plate.
  • 4. Form the salmon mixture into eight 3-inch patties. Carefully coat them with the cracker crumbs. Refrigerate, loosely covered, for 1 hour.
  • 5. Melt the butter with the oil in a 10-inch nonstick skillet over medium heat. Cook the salmon cakes, four at a time, for 3 to 4 minutes per side, pressing down slightly on them with the back of the spatula and adding more butter or oil to the skillet if necessary. Remove to paper towels to drain.
  • 6. To serve, spoon 2 tablespoons of the Light Lemon Yogurt Sauce onto the center of 8 medium-sized plates. Place a salmon cake atop the sauce in the center of each plate. Serve immediately.

Tips:

  • Select the Right Salmon: Opt for wild-caught salmon for its superior flavor and texture. Look for fresh, firm fillets with a vibrant color.
  • Use Fresh Vegetables: Incorporate fresh corn and green chilies for a crisp, flavorful bite. Frozen or canned alternatives may compromise the dish's taste and texture.
  • Properly Flake the Salmon: Ensure the salmon is fully cooked before flaking it into bite-sized pieces. This prevents mushy or overcooked salmon in the cakes.
  • Season Generously: Don't shy away from bold flavors. Use a combination of herbs, spices, and seasonings to enhance the taste of the salmon cakes.
  • Control the Heat: Maintain medium heat when cooking the salmon cakes. High heat may burn the outsides while leaving the insides uncooked.
  • Garnish for Presentation: Elevate the visual appeal of your salmon cakes with fresh herbs, lemon wedges, or a dollop of tartar sauce.

Conclusion:

Salmon cakes with corn and green chili are a delightful culinary creation that combines the richness of salmon with the vibrant flavors of fresh vegetables. By following these tips, you can achieve perfectly cooked, flavorful salmon cakes that will impress your taste buds. Experiment with different herbs, spices, and garnishes to find your own unique flavor combination. Whether served as an appetizer, main course, or brunch dish, these salmon cakes are sure to be a hit among family and friends.
