A excellent fish cake, very similar to the prawn cake I have posted, but of course not as high in cholestrol. You can also try grilling it..if you are concerned about adding on the pounds. Still taste good. I have also tried making them bigger, so that they are like a salmon pattie, and eating it as a burger. YUMMY! 500 g salmon fillets, skin removed
1 egg white
3 tablespoons fine cornflour
3 kaffir lime leaves, shredded
1 tablespoon finely chopped ginger
1 teaspoon wasabi
3 tablespoons chopped flat leaf parsley
oil, to shallow fry
1/4 cup lime juice
1/4 cup soya sauce
2 tablespoons brown sugar

Steps:

  • To make the salmon cakes, remove any bones from the salmon and chop into 5mm (1/4 inch) dice.
  • Combine the chopped salmon with the egg white, corn flour, lime leaves, ginger, wasabi paste and chopped parsley.
  • (MIX IT WELL) Heat 1 cm (1/2 inch) of oil in frying pan over medium heat, to shallow fry the cakes.
  • Place 2 tablespoons of the mixture into the hot oil and cook for 35-45 SECONDS each side, or till golden brown in colour.
  • Drain on kitchen towels, and keep warm in a low oven till you finish cooking up the batter.
  • To make the lime dipping sauce, combine all the ingredients.
  • Serve the dipping sauce with the warm salmon cakes.

1 lime (juice of)
1/2 cup mayonnaise (may use fat free to reduce calories)
1/4 cup sour cream (may use fat free to reduce calories)
2 (6 ounce) cans boneless skinless pink salmon, packed in water, drained and flaked
1/4 cup red bell pepper (finely chopped)
1/4 thinly sliced green green onions with top
1 tablespoon cilantro (fresh and chopped)
3/4 cup breadcrumbs (unseasoned and divided)
1/3 cup mayonnaise (may use fat free to reduce calories)
1 egg (may use just white part to reduce calories)

Steps:

  • For the sauce:.
  • Combine in small bowl juice of lime, mayonnaise and sour cream; mix well. Cover; refrigerate until ready to serve.
  • For salmon cakes:.
  • Drain salmon using a small colander bowl and flake using a pastry blender or fork. Add salmon to a bowl and add remaining ingredients (use only 1/2 cup of bread crumbs); mix well to combine.
  • Sprinkle remaining 1/4 cup of bread crumbs onto bottom of a shallow dish or plate. Scoop salmon mixture into balls ( I use a 2tb scoop) and flatten into bread crumbs coating booth sides evenly. Use more bread crumbs if necessary to coat salmon cakes.
  • Heat 1-2 tb of olive oil in skillet over medium heat until hot. Cook salmon cakes until golden brown, carefully turning once.

1 lime
1/2 cup fat free mayo
1/4 cup fat free sour cream
Salmon Cakes:
2 cans salmon, drained and flaked
1/4 cup finely chopped red bell pepper
1/4 cup thinly sliced green onions with tops
1 Tablespoon snipped fresh cilantro
3/4 cup unseasoned bread crumbs, divided
1/3 cup fat free mayo
1 egg white

Steps:

  • 1. For sauce, zest lime measure to 2 teaspoons of zest. Juice lime to 2 teaspoons of juice. Combine zest, juice, mayo, and sour cream, mix well. Cover and refrigerate till ready to use.
  • 2. For salmon cakes, drain salmon and flake using a fork. Finely chop bell pepper and thinly slice green onions. Snip cilantro using kitchen shears. Add bell pepper, green onions, cilantro, 1/2 cup bread crumbs, mayo and egg white to salmon; mix well.
  • 3. Sprinkle remaining 1/4 cup bread crumbs into the bottom of a shallow dish or plate. Using a medium scoop, scoop salmon mixture over bread crumbs; flatten with the back of scoop to 1/2 inch thickness. Turn to coat evenly with bread crumbs.
  • 4. Heat large skillet over medium until hot. Cook salmon cakes 6-8 minutes or until golden brown, carefully turning once. Serve with sauce.

700 g salmon fillets
1 garlic clove, peeled and chopped
2 tablespoons coriander, chopped
3 shallots or 3 green onions, thinly sliced
1 egg, beaten
2 cm piece fresh ginger, grated

2 cups breadcrumbs
3/4 cup flour
