1 garlic clove, minced
2 1/2 cups reduced-sodium chicken broth
1/4 cup quick-cooking barley
1 tablespoon water
1 tablespoon all-purpose flour
4 ounces salmon, drained
1 cup corn
1/3 cup 2% low-fat milk
1/2 teaspoon chili powder
1/4 teaspoon cumin
1/4 teaspoon oregano
1/8 teaspoon salt

Steps:

3 tablespoons olive oil
2 stalks celery, cut into 1/2-inch slices
8 ounces unpeeled small red potatoes, cut into 1-inch cubes
1 teaspoon kosher salt
1 1/4 teaspoons freshly ground white pepper
1 bunch green onions, coarsely chopped, including half of greens
1 1/2 cups corn kernels (about 2 ears)
4 cups fish or chicken stock
1 cup heavy cream
2 pounds salmon fillets, skin and pin bones removed, cut into 2-inch pieces
Grated zest and juice of 1 lemon
1/4 cup minced fresh dill

Steps:

  • Prepare a campfire or wood-fired grill for cooking with indirect heat.
  • Heat the olive oil in a large, heavy saucepan or Dutch oven over medium heat and sauté the celery for 3 minutes. Add the potatoes, salt, and pepper and cook, stirring occasionally, for 5 minutes. 2 jars (each 8 ounces) clam broth
12 ounces Yukon Gold potatoes, scrubbed and cut into 1/2-inch pieces
1 pound skinless salmon fillet
2 ears corn, shucked
1/4 cup heavy cream

1 medium onion, chopped
1/2 cup celery, diced
2 tablespoons butter

1 large onion, chopped
1 cup celery, diced
1 garlic clove, minced
2 tablespoons flour
3 1/2 cups chicken broth
2 cups half-and-half
17 ounces cream-style corn
1/2 teaspoon salt
1/4 teaspoon white pepper
15 1/2 ounces salmon (drained and flaked if using canned)
parsley, chopped (to garnish)

Steps:

  • Melt butter in a heavy saucepan over medium heat. Add onion, celery, and garlic and cook 4 to 5 minutes or until onion is translucent.

2 cups canned vegetable broth
1 8-ounce russet potato, peeled, cut into 1/2-inch pieces

1 1/2 cups frozen yellow corn kernels, thawed
1 12-ounce piece skinless salmon fillet, cut into 1-inch pieces

Steps:

  • Heat oil in heavy large pot over medium heat. Add onion, sliced fennel, carrot, garlic and bay leaf and sauté until vegetables are light golden, about 7 minutes.
