Time 25m

Yield 4 servings

Number Of Ingredients 13

1 1/2 pounds sushi grade fresh salmon, skin removed
1 English cucumber, thinly sliced
4 tablespoons finely chopped shallots
2 tablespoons finely chopped fresh dill
4 tablespoons finely chopped fresh chives, plus more for garnish
1 tablespoon capers, coarsely chopped
3 tablespoons lemon juice
12 cherry tomatoes, sliced in 1/2
Salt and pepper
Olive oil
Avocado slices
4 endive leaves, for garnish
Toast points or crackers, for garnish

Steps:

  • Cut salmon in small pieces, about 1/4-inch thick. Set aside or cover and refrigerate until ready to serve. Slice cucumber into very thin (almost transparent) rounds and set aside. In a medium bowl, mix together the shallots, dill, chives, capers, lemon juice and finally add the salmon. Cover and refrigerate if not using immediately. Just before serving, chop the tomatoes, season with salt and pepper and a sprinkling of olive oil, and stir to combine. On a serving plate, spread the cucumber slices to cover 2/3 of the plate, leaving a space in the center of the plate. Then arrange the salmon over the cucumber, then top with the seasoned tomatoes. Garnish with sliced avocado and chopped chives. Serve with endive, toast points or crackers.

SALMON TARTARE

Salmon Tartare image

A beautifully simple preparation of raw fish that is a celebration of freshness. The thing I love about this dish is the magic worked by the lemon juice. As well as imparting sharp fresh flavor, the acid in the lemon juice affects the protein in the fish, causing a cooked texture on the surface of the meat whilst leaving the centre rare and soft. Serve with buttered crusty brown toast.

FLAKED SALMON "TARTARE"

Flaked Salmon

Experts recommend eating at least two servings of fatty fish, such as salmon, herring, or tuna, per week. In this dish, bold capers and fresh herbs -- classic beef tartare add-ins -- brighten the buttery flavor of flaked baked salmon.

Provided by Martha Stewart

Categories     Food & Cooking     Appetizers

Number Of Ingredients 12

1 large egg
1 pound salmon fillet, skinned
1 tablespoon extra-virgin olive oil
1 1/4 teaspoons coarse salt
Freshly ground pepper
2 teaspoons fresh lemon juice, plus wedges for garnish
Dash of hot sauce
1 small shallot, finely chopped
1 tablespoon chopped drained capers
3 cornichons, coarsely chopped
2 tablespoons finely chopped chives
1 tablespoon finely chopped fresh flat-leaf parsley

Steps:

  • Place egg in a small saucepan, and cover with cold water by 1 inch. Bring to a boil. Remove from heat. Cover, and let stand 13 minutes. Using a slotted spoon, remove egg, and rinse under cold water until cool. Gently press against a hard surface to crack shell; peel. Cut egg in half lengthwise. Grate each half on the small holes of a grater into a small bowl. Cover with plastic wrap; set aside.
  • Preheat oven to 350 degrees. Place salmon in a 13-by-9-inch nonreactive baking dish. Brush with 1 teaspoon oil; season with 1 teaspoon salt and 1/4 teaspoon pepper. Cover with foil; bake until salmon is cooked through and flakes easily, about 15 minutes. Uncover partially, and let cool slightly in dish on a wire rack. Using a fork, gently flake salmon into large pieces. Transfer to a large bowl.
  • Whisk together lemon juice, hot sauce, and remaining 1/4 teaspoon salt in a bowl. Add remaining 2 teaspoons oil, whisking until emulsified. Drizzle dressing over salmon, and toss gently. Divide among plates. Scatter shallot, capers, cornichons, chives, parsley, and egg over each, dividing evenly; season with pepper. Serve with lemon wedges.

This appetizer is very good. Served this recently at a gathering and the people who were invited kept repeating how wonderful it was. The lemon juice brings out the flavor in an otherwise flavorful dish. Courtesy of Emeril Lagasse, 2003.

SALMON OR TUNA TARTARE

Salmon or Tuna Tartare image

I like to serve this on endive leaves, red pepper squares or rounds of cucumber. You also could top crostini with it. Don't make it too far ahead of serving, because you don't want the fish to cook in the lime juice and you won't have the glistening color or flavor.

Provided by Martha Rose Shulman

Time 15m

Yield 2 1/2 cups, serving 10 as an hors d'oeuvre

Freshly ground pepper
Pinch of cayenne (optional)
Lettuce or endive leaves for serving
red pepper squares for serving
cucumber rounds or toasted croutons for serving

DILLED SALMON TARTARE ON WHOLE GRAIN BREAD

Dilled Salmon Tartare on Whole Grain Bread image

Have been going through all my back issues of Bon Appetit and I found this great recipe for "another" salmon tartare. It has been suggested that it be served in martini glasses on small bed of a mesclun mix with a cocktail rye or some type of rye cracker. The pumpernickel cocktail bread just doesn't cut it. Also, to keep the color of the salmon vivid only add the lime juice in the last 30 minutes - it cooks in that amount of time so there won't be a problem. It is best to buy frozen - slice when it is partially frozen, if you want fresh, you'll have to partially freeze it to slice it. There is a chilling time for at least 30 minutes, which I didn't allow for.

Tips for Making the Perfect Salmon Tartare Spread:

  • Use fresh, high-quality salmon. This is the most important ingredient in the spread, so make sure it's the best you can find.
  • Chop the salmon finely. This will help ensure that the spread has a smooth and even texture.
  • Use a sharp knife. This will make it easier to chop the salmon finely and avoid tearing it.
  • Use a variety of seasonings. This will give the spread more flavor and depth. Some good options include lemon juice, capers, red onion, and fresh herbs.
  • Don't overmix the spread. Overmixing can make the spread tough and dry. Just mix it until the ingredients are evenly combined.
  • Chill the spread before serving. This will help it firm up and make it easier to spread.
