BAKED BRIE WITH ALMONDS AND MANGO

Categories     appetizer

Time 40m

Yield 8 servings

Number Of Ingredients 9

Half 17.5-ounce package frozen puff pastry, thawed
One 8-ounce wheel Brie cheese
1/4 cup mango chutney
1/4 cup golden raisins
5 tablespoons toasted slivered almonds
1 large egg
1 teaspoon fresh thyme leaves
French baguette, sliced, for serving
Sliced apples, for serving

Steps:

  • Preheat the oven to 425 degrees F. Line a rimmed baking sheet with parchment paper.
  • Place the puff pastry sheet on a lightly floured work surface and roll into a 10-inch square. Place the Brie wheel in center of the pastry. Spread the chutney over the Brie; sprinkle with the raisins and almonds. Fold the dough up and over the cheese and fillings, pleating the dough to enclose like a packet or purse. Trim the dough, if needed. Flip the packet over and place on the prepared baking sheet.
  • Whisk together the egg and 1 teaspoon water; brush the Brie packet with the egg mixture.
  • Bake until golden, about 20 minutes. Remove from the oven and sprinkle with the thyme. Cool for about 3 minutes. Serve with sliced apples and baguettes.

MANGO MUSTARD SALMON

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 25m

Yield 4 servings

Number Of Ingredients 7

1 fresh mango, peeled and sliced away from the pit
2 teaspoons stone ground mustard
4 (6-ounce) salmon fillets
Salt and freshly ground black pepper
2 tablespoons grapeseed oil
1 cup panko bread crumbs
2 tablespoons freshly minced flat-leaf parsley

Steps:

  • Puree mango and mustard in a blender and transfer mixture to a shallow container such as a pie plate. Season salmon with salt and black pepper. Heat grapeseed oil over medium-high heat in a large skillet. Dip salmon in mango/mustard mixture and coat with bread crumbs. When the oil begins to shimmer, saute salmon leaving undisturbed for the first 4 minutes or so to allow the seasonings to integrate into the surface of the fish and to allow the caramelization process to begin to prevent "crusting off" of the coating. When you see the edges begin to turn golden, flip the fillets over and cook the other side in the same way. Remove from heat and set aside to carryover cook, or finish in a preheated 325 degree F oven, if necessary.
  • Transfer to a serving dish and sprinkle with parsley.

Tips for Cooking Salmon with Mango and Brie

  • Choose the freshest salmon you can find. Fresh salmon will have a bright pink color and a firm texture. Avoid salmon that is dull in color or has a slimy texture.
  • Cook the salmon to your desired doneness. Salmon can be cooked to rare, medium, or well done. Rare salmon will be pink in the center, medium salmon will be slightly pink in the center, and well done salmon will be cooked all the way through.
  • Don't overcook the salmon. Overcooked salmon will be dry and tough. Cook the salmon for just a few minutes per side, or until it is cooked to your desired doneness.
