Time 23m

Yield 4 serving(s)

Number Of Ingredients 8

1/4 cup Worcestershire sauce
3 tablespoons fresh key lime juice
1 lb chicken breast, four 4-oz pieces
3 medium oranges, sectioned, white pith and seeds removed
2 tablespoons fresh key lime juice
2 tablespoons scallions, chopped
1 tablespoon cilantro, chopped
1 teaspoon chopped green chili (to taste)

Steps:

  • Combine Worcestershire sauce, 3 tablespoons of lime juice and chicken in a ziptop plastic bag.
  • Refrigerate up to 4 hours.
  • Meanwhile, combine remaining ingredients in a medium bowl to make salsa.
  • Refrigerate for a minimum of 1 hour.
  • Preheat grill or broiler.
  • Grill or broil chicken until cooked through, about 4 to 5 minutes per side.
  • Serve chicken with salsa.

Tips:

  • Choosing lean chicken breasts or thighs and removing the skin helps reduce fat and calories while retaining flavor.
  • Using a variety of vegetables, such as onions, bell peppers, and corn, adds flavor, texture, and nutrients to the salsa.
  • Fresh or canned salsa can be used, depending on personal preference and availability. If using canned salsa, choose a variety that is low in sodium.
  • To make the dish more flavorful, marinate the chicken in the salsa for at least 30 minutes before cooking.
  • Baking the chicken in the oven is a healthier cooking method than frying, as it reduces the amount of fat and calories consumed.
  • Using low-fat cheese or non-fat yogurt in the recipe helps reduce fat and calories without compromising taste.

Conclusion:

The salsa chicken recipe is a delicious and healthy meal that is perfect for those following the WW program. It is low in points, packed with flavor, and easy to make. The salsa adds a zesty kick to the chicken, while the vegetables provide essential nutrients. This dish is a great option for a quick and easy weeknight meal or a healthy lunch.
