Four 6-ounce chicken thighs, boneless and skinless, at room temperature
2 tablespoons plus 4 teaspoons canola oil
4 teaspoons kosher salt, for seasoning
2 teaspoons freshly ground black pepper
5 cloves garlic, crushed with sprinkle of salt
2 anchovies in oil, drained, finely chopped
1 cup fresh flat-leaf parsley
1/4 cup fresh chives
1/4 cup fresh tarragon leaves
1 tablespoon lemon zest
1 teaspoon crushed red pepper
1 teaspoon kosher salt
1/2 teaspoon freshly ground black pepper
1/2 cup extra-virgin olive oil

Steps:

  • For the chicken: Preheat a cast-iron grill pan over medium-high heat. Drizzle the chicken with 2 tablespoons of the canola oil. Season with 2 teaspoons of the salt and 1 teaspoon of the pepper; drizzle with the remaining 4 teaspoons canola oil.
  • Place the chicken seasoned-side down on the grill. Season the side facing upwards with the remaining 2 teaspoons salt and 1 teaspoon pepper. Cook the chicken until golden-brown and the exterior has formed a crust, turning midway through to form the cross-hatch pattern, 3 to 4 minutes. (Note: the chicken is not being flipped, the same side is still on the grill.) Flip the chicken and repeat until the other side is golden brown, 3 to 4 minutes. The center of the chicken should be firm to the touch when poked and the meat thermometer should read 165 degrees F.
  • For the salsa verde: Combine the garlic and the anchovies on the cutting board. Put the parsley, chives and tarragon on the cutting board and coarsely chop to combine with the garlic mixture. Put the salsa mixture in a medium bowl and add the lemon zest. Add the red pepper and salt. Mix the herb mixture together while drizzling in the olive oil until thoroughly combined. Put the salsa in a serving bowl and set aside until the chicken is ready.

3 organic chickens
1 lemon
6 sage leaves
1 onion, peeled
3 cloves garlic
1 small bunch of thyme
1 tablespoon kosher salt
Olive oil
Salt, to taste
1 cup parsley, finely chopped
4 cloves garlic, minced
1 medium shallot, minced
2 Fresno peppers, minced
1 teaspoon chili flakes
Juice and zest of 1/2 lemon
2 cups extra virgin olive oil
Salt and pepper to taste

Steps:

  • Rinse the chicken in side and out under cold water. Pat dry and let sit at room temperature for 30 to 60 minutes.
  • Slice the lemon paper thin and remove the seeds. Lift the skin off the breast of the chicken and place 3 lemon slices and 3 sage leaves in between the skin and the meat of each breast. Place onion, garlic, thyme and the remaining lemon in the cavity of the chicken. Rub the entire chicken liberally with olive oil. Salt the outside and the cavity of the chicken.
  • Place in a 425 degree F oven on a roasting rack, breast-side-up. Place a meat thermometer in the thigh and cook until the chicken reaches 160 degrees F. This will take about 10-15 minutes per pound. Remove the chicken from the oven and let it rest for 10 minutes.
  • Combine all ingredients and let sit for 2 hours or more for best results.

It is a fantastic low carb main dish, but if you were so inclined you could serve it with some crusty bread. The anchovies are optional, but I promise you will regret it if you leave them out. Even people who say they don't like them can't taste them in this dish. It should be noted that this recipe makes more salsa verde than is needed for the salad. 1 tablespoon olive oil
2 chicken breasts
4 sprigs thyme
1 clove garlic, sliced
2 cups Italian parsley
2 cups basil leaves
1/4 cup mint leaf
3 cloves garlic
2 tablespoons Dijon mustard
5 anchovy fillets (optional)
1/2 cup extra virgin olive oil
2 tablespoons red wine vinegar
500 g green beans, topped and tailed
1 avocado, sliced

Steps:

  • For the chicken, butterly the breasts open and flatten with a meat mallet or rolling pin.
  • You can do this using cling wrap to avoid mess.
  • Season with salt and pepper.
  • Heat oil in a frying pan.
  • Add garlic and thyme.
  • Allow to infuse slightly.
  • Add breasts to pan.
  • Cook for 2 minutes on each side or until cooked through.
  • Slice chicken into manageable pieces.
  • For the Salsa Verde.
  • Combine all of the ingredients in a foodprocessor OR chop the herbs, garlic, and anchovy fillets really fine and add other ingredients.
  • You will need to taste the sauce, it should not need salt if you use the anchovies but it might need a little more of another ingredient.
  • Blanch the beans in plenty of lightly salted boiling water for 3 minutes.
  • Refresh in cold water to stop the cooking process.
  • Combine beans and avocado in a bowl.
  • Stir in some of the salsa verde and toss to coat.
  • Serve with the chicken on top and perhaps a little more dressing on top.
  • This can be served warm or at room temperature.
  • It is nice either way.

Steps:

  • Combine the chicken thighs, salsa verde, green chiles, chopped garlic, jalapeño, garlic powder, onion powder and cumin in a 6- to 8-quart slow cooker. Stir to evenly combine. (Don't add salt now; jarred salsas are often high in sodium.) Cook on low until the chicken is tender and the flavors are blended, 5 to 6 hours. 200g freekeh
3 tbsp olive oil
1 bay leaf
1 garlic clove crushed
4 asparagus spears, chopped
juice ½ lemon
4 spring onions , chopped
2 celery sticks , chopped
½ cucumber , chopped
1 avocado cubed
1 green chilli , deseeded and finely sliced
6 radishes , halved (smaller ones left whole)
½ small pack flat-leaf parsley , chopped
½ small pack basil , chopped
½ small pack mint , chopped
150g leftover roast chicken , chopped
salsa verde (see recipe, right)
2 tbsp toasted pine nuts

Steps:

  • Soak the freekeh in cold water for 5 mins, then drain and rinse again under the tap. Heat 1 tbsp of the oil in a deep saucepan, add the bay leaf, garlic and freekeh , and toast, stirring vigorously, for 1 min or so.
  • Fill the pan with boiling water, add a generous pinch of salt, bring to the boil and simmer for 15 mins until tender. Add the asparagus for the final 4 mins. Drain and leave to cool. (To speed the cooling, spread out the freekeh on a baking tray. )
  • Once cooled, put the freekeh in a large mixing bowl. Season and combine with the remaining oil and all the other ingredients, topping with the salsa verde and toasted pine nuts to serve.

Though there are a lot of ingredients in this recipe, it's a straightforward chicken saute-and-sauce combination. Brown the chicken -- dark meat is preferable -- then lightly brown the seeds, then soften the vegetables. The tomatillos, if canned, provide enough liquid; if you're using fresh tomatillos you might need to add a little water or stock, but not much. The chicken simmers in the sauce, and lime juice completes the picture. This is traditionally served with a host of garnishes, which I see as optional but fulfilling.

  • Brown pepitas lightly in same pan over medium heat; remove with a slotted spoon. 1 medium onion, chopped, divided
1 medium poblano pepper, chopped, divided
1 clove garlic, minced
2 tablespoons water, or as needed
½ pound boneless, skinless chicken breast, cut into chunks
