Just got this one from a friend, who says it's great. I haven't tried it YET! This has to marinade for 2 hours.

1/2 cup lemon juice
1/4 cup barbecue sauce
1 envelope taco seasoning
2 lbs chicken

Steps:

  • Put lemon juice, bbq sauce and taco seasoning in ziploc bag, seal bag and shake to combine.
  • Put chicken in bag and seal.
  • Place in refrigerator to marinade 2 hours.
  • Pull chicken out of bag and bake or grill until fully cooked.

1 can of old el paso green enchilada sauce
1 medium onion, chopped
2 chicken breasts or 2 chicken tenders (4 to 6)
1 tablespoon butter
grated cheddar cheese or Mexican blend cheese

  • Melt butter in frying pan, add onion and saute until just turning brown.
  • Add chicken and saute on both sides until just turning brown.
