2 cups cooked brown rice (chilled)
3/4 cup black beans (rinsed and drained)
1 cup grape tomatoes (diced)
1 ear fresh corn (steamed and cut from the cob)
1 medium orange bell pepper (diced)
3 green onions (sliced)
1 medium lime (juice and zest) (~ 1/4 cup )
1/4 cup olive oil
2 tablespoons honey
1 teaspoon Dijon mustard
1 clove garlic (minced)
1/4 teaspoon kosher salt
1 teaspoon lime zest
1 small avocado (diced)
1/4 cup chopped cilantro (optional)

Steps:

  • In a large salad bowl, gently toss together the cooked rice, beans, corn, bell pepper, tomato, and green onions. Save the avocado to add after chilling.
  • Juice and zest the lime. Add the juice to a small bowl along with the olive oil, honey, Dijon mustard, and garlic, whisking until well combined. Taste and season with salt to your preference.

Water 1⅓ cups
Black beans ¾ cup
Tomatoes 1
Cheddar cheese ¾ cup

¾ cup black beans, drained and rinsed
1 large tomato, seeded and diced
¾ cup shredded Cheddar cheese
⅓ cup sliced green onions
⅓ cup vegetable oil
¼ cup vinegar
1 tablespoon diced jalapeno peppers
½ teaspoon white sugar
salt to taste
1 avocado - peeled, pitted and diced

Steps:

  • In a saucepan, bring water to a boil. Add rice and stir. Reduce heat, cover and simmer for 20 minutes. Remove from heat and chill.

2 tablespoons lime juice

2 cups frozen corn, thawed
1 can (15 ounces) pinto beans, rinsed and drained

2 cups cooked white rice
1 (15 ounce) can black beans, rinsed and drained
1 cup frozen corn
1 (10 ounce) can of diced Mexican-style tomatoes (like Rotel)
1 cup salsa
1 cup low-fat sour cream
2 cups shredded reduced-fat Mexican cheese blend, divided
1 small red onion, chopped
1 (2 1/4 ounce) can sliced ripe olives, drained

Steps:

  • Preheat oven to 350.
  • In a large bowl, combine beans, corn, tomatoes, salsa, sour cream, 1 cup cheese and cooked rice. Season with salt and pepper.
