SPINACH AND RICE (SPANAKORIZO)
This is a Greek side dish that our family loves. Add a little Feta cheese and fresh lemon after it's cooked and you have heaven.

Steps:
- Heat olive oil in a large skillet over medium-high heat. Saute onions in the oil until soft and translucent. Add spinach, and cook stirring for a few minutes, then pour in the tomato sauce and water. Bring to a boil, and season with parsley, dill, salt and pepper. Stir in rice, reduce heat to low, and simmer uncovered for 20 to 25 minutes, or until rice is tender. Add more water if necessary.

SANTA FE SALMON WITH FRESH SPINACH WILD RICE
15 minute meal from a friend who got this from the grocery store...I cook this for friends all the time. Its so easy!

Steps:
- Santa Fe Salmon.
- Cut salmon into 4 servings; season with salt and pepper. Wash hands.
- Preheat large saute pan on medium-high 2-3 minutes. Combine tomatoes and mayonnaise in medium bowl.
- Coat both sides of salmon, using tongs, with tomato mixture and place in saute pan. Add remaining tomato mixture to pan and cover. Cook 3-5min until temperature reaches 145°F Cook time will vary depending on the thickness of the fillets. Serve.
- Spinach Wild Rice. (I usually use 90 sec Uncle Ben's rice).
- Place spinach and butter in microwave-safe bowl. Cover and microwave on HIGH 3 minutes.
- Stir in rice and microwave 4 more minutes.
- Let stand 2 minutes, sprinkle with cheese, if using, and serve.

Steps:
- In a medium saucepan, heat oil over medium-high heat. Add onion and cook, stirring, until tender but not browned, about 3 minutes.
- Add rice and stir until coated with oil. Stir in water and bring to a boil. Cover, reduce heat, and simmer until most of the water has been absorbed and rice is slightly tender, about 15 minutes.
- Arrange spinach and salmon on top of rice, cover and continue to cook until spinach is wilted and salmon flakes easily when tested with a fork, about 10 minutes.
- Transfer to a blender, add lemon juice and puree on high to desired consistency, adding more water if necessary.
