2 cups shiitake mushrooms, sliced
1 pinch salt
1 sprig fresh rosemary, chopped
3 tablespoons all-purpose flour
2 ½ cups beef broth
salt and pepper to taste
½ cup heavy cream
1 (2 1/2 pound) uncooked prepared beef, veal and pork meatloaf

Steps:

  • Preheat the oven to 325 degrees F (165 degrees C).
  • Melt butter in an oven-safe skillet over medium-high heat. Stir in mushrooms and a pinch of salt; cook and stir until mushrooms begin to brown, about 5 minutes.
  • Stir in fresh rosemary. Add flour and stir to coat the mushrooms; cook and stir for about 3 minutes.

2 pounds lean ground beef
½ pound fresh mushrooms, all minced except for 6
¾ cup fresh bread crumbs
½ cup minced onion
½ cup ketchup
2 eggs, beaten
1 ½ teaspoons salt
½ teaspoon ground black pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).

2 tablespoons oil

1 beef bouillon cube
4 drops Kitchen Bouquet

2 eggs, beaten
1 T. dried parsley
1 t. salt

2 lbs. lean ground beef
1 c. soft bread crumbs
1 T. oil
1/2 c. sliced mushrooms

Steps:

  • In a large bowl, combine 1/2 cup sauce, 1/3 cup water, onion, eggs, parsley, salt and pepper. Mix in beef and bread crumbs. Pat into an ungreased 9"x5" loaf pan. Set loaf pan in a 13"x9" baking pan. Bake, uncovered, at 350 degrees for 1-1/4 hours. At serving time, heat oil in a small skillet over medium heat. Sauté mushrooms until tender, about 3 minutes; drain. Stir in remaining sauce and water. Bring to a boil, stirring constantly. Spoon mushroom sauce over meatloaf. Makes 6 to 8 servings.
