Number Of Ingredients 5

4 eggs
6 (6 in.) flour tortillas
1/2 lb breakfast sausage.
1/4 c grated mexican blend cheese
picante sauce (optional)

Steps:

  • 1. Brown the sausage, crumbling it as it cooks. Drain off the grease.
  • 2. Beat the eggs well. Pour into the skillet with the sausage.
  • 3. Cook stirring often until the eggs are done.
  • 4. Divide the sausage mixture evenly between the 6 torlillas, placing it in the center of each.

  • 6. Roll each taco. Serve warm.

Tips:

  • For the best flavor, use fresh, high-quality ingredients.
  • If you don't have taco seasoning, you can make your own by combining chili powder, cumin, garlic powder, onion powder, paprika, and salt.
  • To make the tacos ahead of time, cook the sausage and eggs and assemble the tacos, then wrap them tightly in plastic wrap and refrigerate for up to 2 days. When you're ready to serve, reheat the tacos in a preheated oven at 350 degrees Fahrenheit for 15-20 minutes.
  • To make the tacos vegetarian, omit the sausage and use crumbled tofu or black beans instead.

  • Serve the tacos with your favorite toppings, such as salsa, sour cream, guacamole, and cheese.
