4 cloves garlic, minced
1 lb. dried navy beans, soaked 8 hours
1-1/2 qt. (6 cups) water
1 bay leaf
1 tsp. chopped fresh rosemary
3 cans (14-1/2 oz. each) fat-free reduced-sodium chicken broth
1 pkg. (13 oz.) OSCAR MAYER Natural Uncured Turkey Sausage, cut lengthwise in half, then sliced crosswise
1/3 cup KRAFT Grated Parmesan Cheese

Steps:

  • Heat oil in large stock pot on medium-high heat. Add onions; cook and stir 5 min. or until crisp-tender. Add carrots, kale and garlic; cook 10 min. or until kale is wilted, stirring occasionally.

1 pound dried navy beans, rinsed
1 tablespoon olive oil
1 pound smoked pork sausage, sliced into 1/2-inch pieces
2 cups chopped onions
1 1/2 tablespoons minced garlic
2 bay leaves
2 sprigs fresh thyme
8 cups chicken stock
3 cups water
2 teaspoons salt
1 1/2 teaspoons freshly ground black pepper
1/2 teaspoon ground cayenne pepper
Loaf of crusty bread, for garnish

Steps:

  • Soak beans in cold water to cover, overnight (8 to12 hours). Drain beans and rinse well.
  • In a large stockpot or Dutch oven, heat the olive oil over medium-high heat. Add the sausage and saute for 5 to 6 minutes, or until browned. Remove the sausage from the skillet and reserve. Add the onions and cook 2 to 3 minutes, stirring occasionally. Add the garlic and cook, stirring, an additional minute.
  • Add the browned sausage back to the stockpot. Stir in the beans, bay leaves, and thyme. Add the chicken stock, water, salt, pepper, and cayenne. Bring soup to a boil; reduce heat to a simmer and cook, partially covered for 2 1/2 to 3 hours, stirring occasionally. Skim off any fat, as necessary, if desired. This is identical to the recipe I use for black-eyed peas on New Years Day. Serve with corn bread and green salad.

6 cups water
6 chicken bouillon cubes
1 tablespoon olive oil
1 lb chopped ham
1 yellow onion, chopped
2 garlic cloves, whole
2 stalks celery, chopped
2 carrots, sliced
salt and pepper

  • Soak beans according to package directions.
  • Add Bouillon cubes to 6 cups water.
  • Add Chopped Ham.
  • Lightly saute onion, celery, garlic in oil, add to stock.

1 large onion, chopped
1/2 pound Italian sausage, casing removed
4 cups chicken stock
3 garlic cloves, sliced
2 bay leaves

1/2 cup diced celery
1 large potato, peeled and diced into 1/2-inch cubes
1 small zucchini, diced
Two 15.5-ounce cans cannellini beans, drained and rinsed
1/4 cup chopped fresh parsley
One 2-inch-square piece Parmigiano cheese rind
1/2 pound small shell pasta

Steps:

  • In a large pot, heat oil over medium heat. Add onion and cook, stirring occasionally until softened--about 3 minutes. 3 cups (1-1/2 pounds) dried navy beans
1 can (14-1/2 ounces) diced tomatoes, undrained
1 large onion, chopped
1 meaty ham hock or 1 cup diced cooked ham
2 cups chicken broth
2-1/2 cups water
Salt and pepper to taste
Minced fresh parsley, optional

Steps:

  • Rinse and sort beans; soak according to package directions., Drain and rinse beans, discarding liquid. Place in a Dutch oven. 1 large bunch kale, rinsed, stemmed and chopped
1 tablespoon olive oil
1 pound spicy linguica sausage, sliced
1 cup chopped shallots
4 cups chicken broth

Steps:

  • Place the navy beans into a large container and cover with several inches of cool water; let stand 8 hours or overnight. Drain and rinse before using.
