SAUSAGE AND BEEF CASSEROLE
I received this recipe from my mothers best friend Lucy. This is one of my favorite meals. This is a great dish for pot-lucks. It would also be great on a cold winters night. I also like to make it a day or two before it is to be eaten.

Add the ground beef, sausage, and onion. Cook, stirring, until the meat is no longer pink and the onion is translucent. Add the garlic to the meat mixture and cook, stirring, for 1 minute longer. Add the crushed tomatoes, tomato paste, basil, oregano, and crushed red pepper. Cook, stirring occasionally, for about 10 to 12 minutes. Taste and add salt and pepper, as needed. In a large bowl, combine the ricotta cheese, 1/2 cup of Parmesan cheese, the egg, and 1 cup of Mozzarella cheese. Stir until well blended. While the sauce is simmering, cook the ziti in boiling salted water following directions on the package. Drain well. Add the hot drained pasta to the bowl with the ricotta cheese mixture. Toss lightly to blend. Add 2 cups of the meat sauce to the ziti mixture. Transfer half of the pasta mixture to the prepared baking dish. Spread about half of the meat sauce over the pasta, then top with the remaining Parmesan cheese and half of the remaining Mozzarella. Top with the remaining pasta mixture, then finish with the remaining meat sauce and remaining Mozzarella cheese. Sprinkle with the chopped parsley. Steps:
- 1. Brown sausage, ground beef and garlic. Make both pkgs of rice as directed. Add rice to drained sausage and ground beef. Add corn, salsa, olives and tomatoes. Pour both pkgs of taco seasoning in, and stir.. Add in cubed velveeta. Pour 1/2 of the mix into a deep casserole dish (I used a disposable aluminum one), layer 1/2 of the shredded cheese, followed by the rest of the mix. Bake for 25 mins @ 350°. After 25 mins, put the rest of the shredded cheese on it and put back in the oven until melted.
Tips:
- Use high-quality ingredients: The better the ingredients, the better the casserole will taste. Use fresh vegetables, lean ground beef, and flavorful sausage.
- Brown the beef and sausage before adding it to the casserole: This will help to develop flavor and prevent the meat from becoming dry.
- Use a variety of vegetables: This will add flavor, texture, and nutrients to the casserole. Some good options include carrots, celery, onions, potatoes, and peas.
- Use a flavorful sauce: The sauce is what will really bring the casserole together. Use a sauce that is rich, flavorful, and complements the other ingredients.
- Bake the casserole until it is bubbly and hot: This will ensure that the casserole is cooked through and that the flavors have had a chance to meld.
- Serve the casserole with your favorite sides: Some good options include mashed potatoes, rice, or a salad.
Conclusion:
Sausage beef casserole is a hearty, flavorful, and easy-to-make dish that is perfect for a weeknight meal.
