SPICY ITALIAN SAUSAGE AND CHEESE BREAD

Steps:
- Preheat oven to 375 degree F, and sprinkle 1 tablespoon of the cornmeal onto a large baking sheet pan.
- Heat the olive oil in a medium skillet over medium-high heat. Add the sausage and cook until browned and no pink is left, about 5 minutes. Add the onions and cook, stirring occasionally, until the onions are softened, about 3 minutes. Add the garlic and crushed red pepper and cook for 1 minute, stirring constantly. Remove the skillet from the heat and add the basil and parsley, stirring to combine. Cool the sausage mixture completely.
- Sprinkle the remaining tablespoon of cornmeal onto a lightly floured surface and place the pizza dough on top of the cornmeal. Roll the dough into a 10 by 14-inch rectangle. Spread the cooled sausage mixture over the dough, leaving a 1-inch border around the edges. Sprinkle the shredded cheese over the sausage. Brush the 1-inch border of the dough with the egg wash. Starting at a long end, roll the dough, jelly roll-style, into a log shape, pinching the edges closed as you roll. Place the bread, seam side down, on the prepared baking sheet and brush the top of the bread with the remaining egg wash.
- Bake the sausage bread for 35 to 40 minutes, or until golden brown and cooked through. Allow bread to stand 10 to 15 minutes before slicing. To serve, slice the bread into 1-inch pieces and serve warm.
- In a large bowl, combine the water, yeast, sugar, and 1 tablespoon oil and stir to combine. Let sit until the mixture is foamy, about 5 minutes.
- Add 1 1/2 cups of the flour and the salt, mixing by hand until it is all incorporated and the mixture is smooth. Continue adding the flour, 1/4 cup at a time, working the dough after each addition, until all the flour is incorporated but the dough is still slightly sticky. Turn the dough out onto a lightly floured surface and knead until smooth but still slightly tacky, 3 to 5 minutes.
- Oil a large mixing bowl with the remaining 1 1/2 teaspoons olive oil. Place the dough in the bowl and turn to oil all sides. Cover the bowl with plastic wrap and set in a warm, draft-free place until nearly doubled in size, 1 to 1 1/2 hours. Use as directed.

- Cover dough and let rise in a warm place until doubled. Preheat oven to 350°. In a large skillet, cook sausage, mushrooms and onion over medium-high heat until sausage is no longer pink, breaking up sausage into crumbles, 6-8 minutes. Drain. Transfer to a bowl; cool., Stir in two eggs, cheese and seasonings. Roll each loaf of dough into a 16x12-in. rectangle. Spread half of the sausage mixture over each rectangle to within 1 in. of edges. Roll up jelly-roll style, starting with a short side; pinch seams to seal. - Prepare roll mix according to package directions, letting rise only once, about 1 hour.
- Preheat oven to 350 degrees F (175 degrees C). Line a large baking sheet with parchment paper.
- In a large skillet brown the pork sausage and pepperoni and drain well.
- In a large bowl, combine the cooked sausage mixture, parmesan cheese, mozzarella cheese, cheddar cheese, 2 beaten eggs, parsley flakes, garlic powder, MSG powder, onion flakes, and oregano. Stir until well combined.

- Roll dough into approximately 12 x 15-inch rectangle. Cook the sausage and mix it with the eggs and shredded cheese. Spread the mixture on top of the bread dough. Roll up the dough like a jelly roll and place into a greased or Spam sprayed bundt pan. Let rise in a warm area until it gets puffy (about an hour). Cook on platesetter (feet down) at about 375°F dome temperature. Place bundt pan on platesetter and cook until top is golden brown (usually about 35 to 45 minutes). Invert bundt pan onto cutting surface and then brush butter on all sides of bread roll. Slice and enjoy. Cook's note: We quite often do the preparation and assembly the night before and leave in the bundt pan in the fridge, covered with a wet towel to keep dough from drying. The next morning take the bundt pan out of the fridge before starting. By the time the oven is ready and stabilized the dough has warmed up and risen some.

- Cut up onions and peppers into large strips. Place them in a separate bowl to be used later in the recipe.
- Add the vegetable oil to a frying pan.
- Add sausages to the frying pan and fry the sausages until fully cooked.
- Remove the sausages and pour out the grease from the pan.
- Cut the sausages into thick slices. Keep them separate from frying pan for the moment.
- Add pepper and onion strips to the frying pan. Cover pan to retain moisture and saute them on a very low heat setting until soft.
- Add tomato paste and mix with ingredients in the frying pan.
- Add salt and black pepper if desired.
- Add back the sliced sausage.
- Cover pan and let the ingredients simmer on low heat for 5 minutes.
- Optional - If the dish looks too dry (or you enjoy the taste of wine!), add the red wine.
- Cut the bread roll in half.
- Scoop out some hot sausage & peppers from the frying pan and place it on one half of the bread.
- Add the shredded cheese on top of the warm filling.
- Close the bread roll.

- Preheat the oven to 375 degrees.
- In a skillet over medium-high heat, brown the sausage in small pieces together with the chopped onion (and the mushrooms and red wine, if using) in a skillet until completely brown and cooked through.
- Remove meat and onion from the pan with a slotted spoon and let drain on a plate covered with paper towel. Make sure it's drained well! (You can also put it in a colander and rinse it with hot water to get even more drippings removed from the cooked meat, it you like.).
- When cooled and drained well, place the sausage and onion in a bowl and mix with the eggs, basil, allspice, garlic powder, sage, salt, pepper, mozzarella, and Parmesan (and Tabasco, if using); stir together well.
- On a lightly floured board, set one pound of the pizza dough; sprinkle the top of the dough lightly with flour and roll it out 1/2-inch thick into an approximate 10x12-inch rectangle.
- Leaving a 1 1/2 inch border on the sides of the rectangle, spread half the sausage mixture over the dough.
- Fold in the border of dough and, starting at a narrow end, roll the dough in a"jelly roll" fashion.
- Place the roll seam-side down on a baking sheet; make the second sausage roll with remaining ingredients and place it on the baking sheet.
- Bake the rolls for 40-45 minutes at 375 degrees until they are crusty and brown; let cool for about five minutes on a wire rack before serving.
- Serve warm on cutting boards, with a knife for cutting and an assortment of good mustards.

- Thaw dough at room temperature until about double in size.
- Brown sausage with onions, oregano, and a dash of garlic powder. Drain.
- Separate one of the eggs, setting aside the white for later.
- Place the other egg and the egg yolk from above in large bowl with cheeses. Add sausage mixture and toss all together.
- Cover a cookie sheet with foil and flatten out dough to cover.
- Spread meat mixture over dough.
- Roll dough up in jelly-roll style (i.e., from long end to long end) with mixture inside. Pinch seam together to seal.
- Place seam-side down on cookie sheet. Brush top with reserved egg white.
- Bake at 350 degrees for 40 minutes.
- After baking allow to cool for 10 minutes, then cut into slices about 1-inch thick.
