1 lb hot pork sausage
1 pkg 8 oz. cream cheese
2 c shredded cheddar cheese

Steps:

  • 1. Heat oven to 375°F.
  • 2. Unroll 1 can of dough into 2 long rectangles. Place in ungreased 13x9-inch glass baking dish; press over bottom and 1/2 inch up sides to form crust.
  • 3. Cook sausage over medium heat, stirring frequently, until no longer pink. Remove sausage from skillet; discard drippings. To same skillet, add cream cheese. Cook over low heat until melted. Add cooked sausage; stir to coat. Spoon evenly over crust in baking dish. Sprinkle with cheddar cheese.

1 package (1/4 ounce) active dry yeast
1-1/3 cups warm water (110° to 115°), divided
1/2 teaspoon salt
3 to 3-1/2 cups all-purpose flour
1 pound bulk Italian sausage
1 medium sweet red pepper, diced
1 medium green pepper, diced
1 large onion, diced
4 cups shredded part-skim mozzarella cheese
1 large egg
1 tablespoon water
2 tablespoons grated Parmesan cheese
2 tablespoons minced fresh parsley
1/2 teaspoon dried oregano
1/8 teaspoon garlic powder

Steps:

  • In a large bowl, dissolve yeast in 1/2 cup warm water. Add the salt, remaining water and 2 cups flour. Beat until smooth. Add enough remaining flour to form a firm dough. , Turn onto a floured surface; knead until smooth and elastic, about 6 minutes. Place in a greased bowl, turning once to grease top. 1 Tbsp olive oil or as needed
1 onion, chopped
2 c grated zucchini
2 clove garlic, minced
3/4 tsp salt & fresh cracked black pepper - or to taste
3/4 lb bulk sausage
1/2 c chopped mushrooms
1/4 tsp thyme, dried or more to taste
1/4 basil, dried
1/2 tsp onion powder
1/8 - 1/4 tsp ground nutmeg
1/2 tsp hot pepper flakes - optional
1/2 c heavy cream
1 c milk
1 c flour
2 eggs, lightly beaten
2 c shredded, cheddar cheese or shredded swiss...both work well
couple Tbsp grated parmesan cheese

Steps:

  • 1. Preheat oven to 400 degree F. Spray a 9 x 13 baking dish with nonstick cooking spray. Set aside.
  • 2. In a large skillet, add olive oil. Over medium heat, once oil is hot, add your onion, garlic and zucchini. Cook this mixture just until the onion becomes translucent, garlic and zucchini become tender...about 5 minutes. Place this mixture into a large bowl.
  • 3. In the same skillet, brown the sausage along with the mushrooms, salt and pepper. Cook until sausage is no longer pink. Drain and pour this mixture into the same bowl as the onion mixture.
  • 4. Add all remaining ingredients, except for the Parmesan cheese. Mix all until well combined and pour into prepared baking dish.
  • 5. Sprinkle with Parmesan cheese. Bake for 40 - 45 minutes or until pick comes out clean in the center of the bars.
  • 6. Leave cool a few minutes, then cut into squares. As I said, these can be eaten warm or room temperature. With or without a sauce. I usually serve with sour cream. Enjoy!

2 pounds assorted sausages, such as Kielbasa, Linguica, Spicy Italian, or Bratwurst, cut into 2-inch slices
2 red bell peppers, stems and seeds removed, cut into 1-inch pieces
2 red bell peppers, stems and seeds removed, cut into 1-inch pieces
2 green bell peppers, stems and seeds removed, cut into 1-inch pieces
2 green bell peppers, stems and seeds removed, cut into 1-inch pieces
3 medium yellow onions, peeled and cut into 8ths
10 to 12 inch-long wooden skewers soaked in water for 30 minutes
Polenta Squares, recipe follows
4 cups water
1 cup polenta
2 teaspoons salt
1/2 cup grated Fontina or Monterey Jack
1 tablespoon minced jalapeno

Steps:

  • Preheat a gas or charcoal grill. Thread the sausages, red and green bell pepper pieces, and onions alternately onto the skewers. Grill the brochettes until the sausage is cooked through and the vegetables are lightly charred, turning occasionally, about 8 to 12 minutes. Meanwhile, place the polenta squares on the grill and cook until warmed through and marked by the grill, about 2 to 3 minutes per side.
  • Remove the brochettes and grilled polenta from the grill. With the prongs of a fork, slide the sausages and vegetables from the skewers and serve on top of the grilled polenta squares.
  • In a heavy medium saucepan, bring the water to a boil over high heat. Stir the polenta and salt into the water, lower the heat to medium-low and simmer, covered, stirring from time to time. Cook until the polenta is cooked through and thickens, about 20 to 25 minutes.
  • Remove the pan from the heat and stir in the cheese and jalapenos until smooth. Pour the polenta into a lightly oiled, shallow baking dish. Cover tightly with plastic wrap and refrigerate until firm, at least 6 hours and up to 2 days in advance.
  • Run a knife around the edge of the baking dish and unmold the polenta onto a cutting board. Cut into 3-inch by 3-inch squares and keep cool, wrapped, until ready to grill.
