SAUSAGES WITH POTATOES AND HOT PEPPERS

Sausages with Potatoes and Hot Peppers image

Provided by Lidia Matticchio Bastianich

Categories     Salad     Pepper     Potato     Side     Fry     Dinner     Sausage

Yield Serves 6

Number Of Ingredients 9

2 pounds red potatoes or new potatoes (4 medium-sized is best)
1/2 cup extra-virgin olive oil
6 plump garlic cloves, crushed and peeled
1/2 teaspoon peperoncino flakes, or to taste
1 cup Tuscan-style peperoncini (small whole peppers) in vinegar, drained, seeded, and thinly sliced (12-ounce jar)
3/4 teaspoon coarse sea salt or kosher salt, or to taste
1 1/2 pounds sweet Italian sausages, preferably thin
Recommended Equipment
A heavy-bottomed skillet or sauté pan, 13-inch diameter or larger, with a cover

Steps:

  • Scrub and dry the potatoes, but don't peel them. Slice them lengthwise into sticks and wedges, about 1/2 inch wide (French-fry size).
  • Pour the olive oil into the skillet and set over medium-high heat. Scatter the garlic and peperoncino flakes in the oil. Stir and toss the garlic for a minute or so, until lightly colored, then, with a slotted spoon or skimmer, scoop all the cloves from the pan and reserve. Strew the sliced pickled peperoncini in the oil and toast them, stirring, for about a minute, just to get them sizzling, then scoop them out-letting all the oil drain back into the pan.
  • Scatter the cut potatoes in the skillet, and toss them in the flavored oil. Season with 1/2 teaspoon of salt, and cook for 6 minutes or so, over moderate heat. Toss and turn them frequently, until lightly crisped on all sides.
  • Push the potatoes to the side of the skillet, and lay all the sausages in the pan. Cook for 5 or 6 minutes, rotating and shifting the sausages until they're sizzling and lightly browned on all sides; turn the potatoes as needed so they don't burn.
  • Cover the pan, lower the heat, and keep the potatoes and sausages sizzling and caramelizing slowly for about 20 minutes, turning and moving them in the skillet now and then. Remove the cover, and scatter the reserved garlic and peperoncini all over. Taste a potato, and season with more salt if you like. Cook uncovered for another 10 minutes or so, over low to moderate heat, until all the potatoes and sausages are caramelized and crisp on the outside, and tender and fully cooked inside.
  • Serve hot (and spicy).

RED HOT SAUSAGE AND POTATOES

Red Hot Sausage and Potatoes image

This recipe is courtesy of Robin, it is my BF's absolute favorite, he could eat this for breakfast lunch and dinnner. To speed up the recipe you can just buy a bag of Simply Potatoes (homestyle work best). Great for camping, cut everything up ahead of time, cook the potatoes and then store in ziplocks in your cooler till ready to cook. Edit: due to the last review, I wanted to make sure you knew to use Franks Red Hot, which is a lot different from Tabasco sauce. It isn't quite as strong, but it still has quite a kick to it, so start out with just a small amount and then add more to your taste. Enjoy!

CHICKEN, SAUSAGE, PEPPERS, AND POTATOES

Chicken, Sausage, Peppers, and Potatoes image

You'll need a large, heavy-duty roasting pan (or a couple of smaller ones) and a very hot oven for this delicious dish. The long oven time makes everything beautifully caramelized and the chicken fork tender.

Categories     Meat and Poultry Recipes     Chicken     Chicken Thigh Recipes

Time 1h30m

Yield 6

Number Of Ingredients 11

4 large links hot Italian sausage
2 tablespoons olive oil, divided
6 bone-in, skin on chicken thighs
½ pound assorted sweet peppers, seeded
1 small red onion, sliced
½ yellow onion, sliced
4 large Yukon Gold potatoes, quartered
2 teaspoons dried Italian herbs
2 teaspoons kosher salt, plus more as needed
Freshly ground black pepper to taste
1 tablespoon Chopped fresh Italian parsley

Steps:

  • Preheat oven to 450 degrees F (230 degrees C).
  • Heat olive oil in a skillet over medium heat. Cook sausage links until browned and oil begins to render, about 3 minutes per side. While sausages are cooking, pierce them lightly here and there with the tip of a sharp knife so some fats and juices are released. Remove from heat and let cool slightly.
  • When sausages are cool enough to handle, cut them into serving pieces, about 2-inch slices. Transfer back to pan along with any accumulated juices from the cutting board.
  • Cut two slashes down to the bone on the skin side of each chicken thigh.
  • Depending on the size of the peppers, halve or quarter them and place in a large mixing bowl. Add the sliced red and yellow onions and potato chunks. Add chicken thighs and sausage pieces with pan juices.
  • Season with kosher salt, black pepper, and Italian herbs. Drizzle with a tablespoon of olive oil.
  • Mix with your hands until all ingredients are coated in oil, 3 or 4 minutes. Transfer to large, heavy-duty roasting pan. Evenly space the chicken thighs skin side up. Position potatoes near the top.
  • Place in preheated oven until chicken is cooked through and everything is caramelized, about 1 hour. An instant-read thermometer inserted near the bone should read 165 degrees F (74 degrees C). Sprinkle with chopped fresh Italian parsley, if desired.

Tips:

  • Choose the right sausage: For this recipe, it's best to use a firm, fully cooked sausage like kielbasa or bratwurst. This will prevent the sausage from breaking apart during cooking.
  • Slice the sausage and potatoes evenly: This will help them cook evenly. If the pieces are too thick, they will take longer to cook and may not brown properly.
  • Use a large skillet: This will give the sausage and potatoes plenty of room to cook without overcrowding. If you use a skillet that's too small, the ingredients will steam instead of fry.
  • Don't overcrowd the skillet: If you add too much sausage and potatoes to the skillet, they will not cook evenly. Cook the sausage and potatoes in batches if necessary.
  • Cook the sausage and potatoes over medium heat: This will allow them to cook through without burning. If you cook them over high heat, they will brown too quickly and may not cook through.
  • Add the hot peppers last: This will prevent them from burning. If you add them too early, they will become bitter.

Conclusion:

This sausage, potatoes, and hot peppers recipe is a simple but flavorful dish that can be enjoyed for breakfast, lunch, or dinner. It's also a great way to use up leftover sausage. With just a few simple ingredients, you can create a delicious and satisfying meal that the whole family will love.
