SAUTEED APPLES AND ONIONS
This was once a pioneer favorite. Yes, it sounds weird, but it's delicious. You'll want to have something to go with this that has some protein, like a garden burger or a brown rice packet, both of which you can microwave. Apples and onions only takes about 10 minutes, a few dollars and it's delicious as a topping for rice or even by itself for a light snack.

BLINK OF AN EYE BELL PEPPER SAUTE
I am not a fan of overly cooked bell peppers. To my palate they become bitter; look and taste slimy. However, put a plate of grilled, stir fried or sauteed bell peppers in front of me and that's a different story. This is from Martha Stewart's Everyday Food supplemental magazine. The trick is NOT to overcook the bell peppers to both maintain the sweet taste and the lovely colors. Try to use 2 different color of bell peppers if you can; orange, red, yellow or all three if you wish.

Steps:
- Remove stems from peppers. Halve the bell peppers crosswise then cut into 1/2" strips.
- Heat the olive oil in a non-stick pan over medium heat.
- Add bell peppers and sauté for about 2-3 minutes. Then add the red onion crescents (and garlic if using) and sauté another 2 minutes. Be careful not to burn.
- You want the bell peppers to be slightly softened but still firm. Does that make sense?.
- Season with salt and pepper and transfer to serving platter. Great as a side dish or served over pasta or rice.

BRAISED PEPPERS AND ONIONS
This base of slowly stewed peppers and onions can serve as the foundation for a wide variety of dishes: Add seared flank steak or pork butt, capers, olives, raisins and canned tomatoes, and simmer it into deliciously shreddable Cuban ropa vieja, to enjoy with black beans, rice and braised greens. Slice Italian sausage, sear it along with chicken legs, then add 1/2 cup each of brown sugar and apple cider vinegar, plus a couple of cups of these peppers and onions, and cook until the sauce reduces to a sweet-tart glaze as the meat slowly braises. (Try that on top of boiled yellow potatoes.) Bloom freshly ground ancho, pasilla or other dried chile in oil, then add this sauté, a few cups of cooked black beans and chickpeas, plenty of Mexican oregano and some canned tomatoes to simmer into a rich vegan chili, garnished with roasted sweet potato. But for the simplest use, just slather these peppers on top of a hot dog in a buttered, toasted bun.

Steps:
- Heat oil in a large Dutch oven over medium until shimmering. Add peppers, onion, garlic, cumin, bay leaves, a large pinch of salt and a few grinds of black pepper. Cook, stirring occasionally, until vegetables are completely tender and the mixture is not runny or watery, about 30 minutes. Adjust heat as necessary to prevent any browning.
- Allow mixture to cool, then store in sealed containers in the refrigerator for up to 1 week.
Tips:
- Choose the right apples: For this recipe, firm, tart apples like Granny Smith or Honeycrisp work best. They hold their shape well and won't turn to mush when cooked.
- Slice the apples and onions thinly: This will help them cook evenly and quickly.
- Use a large skillet: This will give the ingredients plenty of room to cook without overcrowding.
- Don't overcrowd the skillet: If you do, the ingredients will steam instead of sautéing.
- Cook the ingredients in batches if necessary: If you have a lot of ingredients, you may need to cook them in batches to avoid overcrowding the skillet.
- Season the ingredients to taste: Add salt, pepper, and other seasonings to taste. You can also add a pinch of sugar to balance out the tartness of the apples.
- Serve immediately: Sautéed apples, onions, and bell peppers are best served immediately. They can be served as a side dish or used as a topping for tacos, burritos, or other dishes.
Conclusion:
Sautéed apples, onions, and bell peppers are a quick and easy side dish that can be enjoyed for breakfast, lunch, or dinner. They are also a great way to use up leftover apples and onions. This recipe is a great way to get your daily dose of fruits and vegetables. It is also a versatile dish that can be served as a side dish, appetizer, or even a main course.
