Meanwhile, heat 1 tablespoon oil in 12-inch nonstick skillet over medium-high heat until shimmering. Add fennel bulb and 1/4 teaspoon salt and cook, stirring occasionally, until softened, 8 to 10 minutes. Add garlic and pepper flakes and cook, stirring constantly, until fragrant, about 30 seconds. Transfer fennel mixture to small bowl. 2. Return now-empty skillet to medium-high heat, add 1 tablespoon oil, and heat until shimmering. Add cabbage and sprinkle with 1/2 teaspoon salt. Cover and cook, without stirring, until cabbage is wilted and lightly browned on bottom, about 3 minutes. 3. Stir and continue to cook, uncovered, until cabbage is crisp-tender and lightly browned in places, about 4 minutes longer, stirring once halfway through cooking. Remove skillet from heat. Stir in fennel mixture, reserved fennel fronds, and lemon juice. Season with salt to taste, transfer to serving bowl, drizzle with remaining 1 tablespoon oil, and sprinkle with Parmesan. Serve.

SAUTEED CABBAGE
This is very yummy! Red cabbage has a much better flavor than green, so it is better to use. Any spices you want can be used, but salt and pepper is simplest.

SAUTEED CABBAGE
I grew up on smothered cabbage, but I think this one can beat them all...tender-crisp and fast. See note for caraway.

Steps:
- In a saute or frying pan on medium-high heat, melt butter. Add chopped garlic and stir until fragrant, about 1 minute. Do not burn garlic. Add shredded cabbage to garlic and butter, tossing to coat.
- Season with salt and pepper and continue to cook cabbage, tossing occassionally until it just begins to turn golden, about 10-15 minutes.
- Note: Caraway is a great addition. Add 1/2 teaspoon with the garlic and stir until fragrant.
Tips:
- Choose the right cabbage: For this recipe, it's best to use a firm, green cabbage. Avoid using red or savoy cabbage, as they have a different flavor and texture.
- Slice the cabbage thinly: This will help it cook evenly and quickly.
- Use a large skillet or saucepan: You want to have enough room to spread out the cabbage and fennel so that they can cook evenly.
- Don't overcrowd the pan: If you add too much cabbage and fennel to the pan, it will steam instead of sautéing.
- Cook the cabbage and fennel over medium-high heat: This will help them caramelize and develop a nice flavor.
- Season the cabbage and fennel with salt and pepper: This will help to enhance their flavor.
- Add other vegetables: If you like, you can add other vegetables to this recipe, such as carrots, celery, or onions.
- Serve the cabbage and fennel immediately: This dish is best served hot, so don't let it sit around for too long before serving.
Conclusion:
Sautéed cabbage with fennel is a delicious and easy-to-make side dish that can be enjoyed with a variety of main courses. It's a great way to get your daily dose of vegetables, and it's also a good source of vitamins and minerals. Next time you're looking for a healthy and flavorful side dish, give this recipe a try.
