1 tablespoon olive oil
1 small onion, finely chopped
1 can (14.5 ounces) reduced-sodium chicken broth
1 cup long-grain white rice
Coarse salt and ground pepper
2 red bell peppers (ribs and seeds removed), sliced lengthwise into thin strips
8 ounces precooked andouille or kielbasa sausage, halved lengthwise and thinly sliced crosswise
1 pound frozen large shrimp, thawed, peeled, and deveined

1 tablespoon olive oil
1 small onion, finely chopped
1 (14 1/2 ounce) can reduced-sodium chicken broth
1 cup long-grain white rice
coarse salt
fresh ground black pepper
