All purpose flour
1 tablespoon olive oil
2 tablespoons (1/4 stick) butter
2 tablespoons fresh lemon juice
2 tablespoons water

1 large shallot, minced
1/4 cup dry white wine
1/3 cup water
2 tablespoons Dijon mustard

2 scallion greens, cut diagonally into 1/4-inch slices (about 2 tablespoons)

  • Remove tough muscle from side of each scallop if necessary. Pat scallops dry and season with salt and pepper. In a 10-to 12-inch non-stick skillet heat oil over moderately high heat until hot but not smoking and sauté scallops 1 to 2 minutes on each side (depending on size), or until golden and just cooked through. 1 lb sea scallops, patted dry
1 tablespoon olive oil
2 tablespoons butter
2 tablespoons fresh lemon juice

3 ripe plum tomatoes, about 1/2 pound
2 tablespoons butter or olive oil
Salt and freshly ground pepper to taste
1/3 cup finely chopped shallots or scallions

4 tablespoons chopped fresh coriander
