1/4 cup lemon juice
1/4 cup olive oil
4 garlic cloves, minced, to taste

1 (6 ounce) bag spinach (I use baby spinach leaves)

Steps:

  • Stir together garlic, pepper, salt and lemon zest.
  • Blend in lemon juice and olive oil.
  • Set aside.
  • Heat 1 tablespoon olive oil in skillet over medium-high heat.
  • Add the shrimp, and cook for 2 minutes.

1/4 cup dry white wine

1 (6 ounce) package fresh Baby Spinach
3 tablespoons butter
1 onion, finely chopped
2 cups white fresh button mushrooms, sliced
1 -2 tablespoon fresh minced garlic (or to taste)
1 cup chicken broth
1/4 cup dry white wine
2 (3 ounce) packages cream cheese
1 pinch nutmeg (or to taste)

1 1/2 lbs fresh cooked medium shrimp (tails removed)
