PASTA WITH ZUCCHINI AND OREGANO

Pasta with Zucchini and Oregano image

Provided by Ann Gillespie

Yield Makes 4 servings

Number Of Ingredients 6

1 pound campanelle (trumpet-shaped pasta) or orecchiette (little ear-shaped pasta)
6 tablespoons extra-virgin olive oil, divided
2 pounds zucchini, trimmed, cut into 1/3-inch-thick slices
6 garlic cloves, chopped
2 tablespoons chopped fresh oregano
1/2 cup grated pecorino cheese, plus additional for sprinkling

Steps:

  • Cook pasta in large pot of boiling salted water until tender but still firm to bite, stirring occasionally. Drain, reserving 1 cup cooking liquid. Return pasta to pot.
  • Heat 2 tablespoons oil in heavy large skillet over high heat. Add zucchini; sauté until tender and beginning to brown, about 8 minutes. Mix in garlic and oregano; remove from heat. Add zucchini mixture to pasta, adding reserved pasta cooking liquid by 1/4 cupfuls as needed to moisten. Add 1/2 cup cheese; stir until melted. Transfer to large bowl. Serve, passing additional cheese for sprinkling.

Tips:

  • Choose fresh, tender zucchini. Look for zucchini that is deep green in color and has smooth, unblemished skin. Avoid zucchini that is yellow or has brown spots, as this indicates that it is overripe.
  • Slice the zucchini evenly. This will help ensure that the zucchini cooks evenly. If you are using a mandoline, be sure to use the safety guard to avoid cutting yourself.
  • Don't overcrowd the pan. If you overcrowd the pan, the zucchini will not cook evenly and will become mushy. Cook the zucchini in batches if necessary.
  • Cook the zucchini over medium heat. This will help prevent the zucchini from burning.
  • Season the zucchini with salt and pepper to taste. You can also add other seasonings, such as garlic powder, onion powder, or dried oregano.
  • Serve the zucchini immediately. Zucchini is best served fresh, so don't let it sit for too long before serving.

Conclusion:

Sautéed zucchini with oregano and feta is a delicious and healthy side dish that is perfect for any occasion. It is easy to make and can be tailored to your own taste preferences. With its vibrant color and flavorful combination of ingredients, this dish is sure to be a hit with everyone at your table.
