Provided by Katie Lee Biegel

Time 55m

Yield 6 to 8 servings

Number Of Ingredients 15

1/2 teaspoon paprika
1/4 teaspoon cayenne pepper
1/4 cup plus 1 tablespoon extra-virgin olive oil
4 tablespoons maple syrup
Kosher salt
1 cup rolled oats
1/2 cup raw cashews
1/2 cup raw pepitas
1/2 cup raw walnuts
1 tablespoon fresh rosemary, chopped
One 7-ounce wheel Brie
1 Honeycrisp apple, thinly sliced
1/4 cup dried apricots, chopped
1/4 cup dried cranberries
Crackers and crostini, for serving

Steps:

  • Preheat the oven to 350 degrees F. Line 2 baking sheets with parchment paper. Arrange the racks of the oven so that you can use two.
  • Whisk together the paprika, cayenne, 1/4 cup oil, 2 tablespoons syrup and a pinch of salt in a medium bowl. In another medium bowl, combine the oats, cashews, pepitas, walnuts and rosemary. Add the oil mixture to the oat mixture and stir to combine. Spread evenly in one layer on one of the lined baking sheets. Bake, stirring halfway through, until golden brown and crispy, 25 to 30 minutes. Meanwhile, add the Brie to the other lined baking sheet and bake for 15 minutes.
  • Heat the remaining tablespoon oil in a small nonstick skillet over medium-high heat. Add the apples to the skillet and cook, stirring occasionally, until the apples start to soften and brown, about 3 minutes. Add the remaining 2 tablespoons maple syrup and 2 tablespoons water, then stir, reduce the heat to low and cover until ready to use. Season with salt.
  • Remove the granola from the oven and stir in the dried fruit. Reserve 1 cup of the granola. Let the rest cool completely, then transfer to an airtight container (save this for another use).
  • Transfer the Brie to a serving platter and top with the warm apples. Sprinkle on the cup of savory granola. Serve warm with crackers and crostini.

SAVORY STUFFED BAKED APPLES RECIPE - (4.5/5)

Savory Stuffed Baked Apples Recipe - (4.5/5) image

Provided by á-11135

Number Of Ingredients 9

1 (6 oz.) box stuffing mix
6-8 assorted apples
1 3/4 cups low-sodium chicken or vegetable broth, divided
1/2 pound ground sausage, optional
1/2 cup dried cranberries
1/2 cup onion, finely chopped
2 stalks celery, finely chopped
2 tablespoons unsalted butter
Kosher salt and freshly ground pepper, to taste

Steps:

  • 1. In a large pan or skillet over medium-high heat, melt butter and sauté onion and celery until softened. 6-8 minutes. Season generously with salt and pepper. 2. Add sausage and cook, breaking sausage up as you go, until browned and cooked through. Season with salt and pepper. 3. Transfer sausage mixture to a large bowl, then add in stuffing mix and dried cranberries. Pour in 1 1/4 cups chicken broth and stir until everything is combined and just moistened. 4. Preheat oven to 350º F. 5. To prepare apples: cut off the tops of each one, then take a tablespoon or melon baller and scoop out the core, making sure to leave at least 1/4-inch around the bottom and sides. 6. Spoon sausage stuffing mixture into cored apples, then transfer to a large baking dish. Pour remaining 1/4 cup chicken broth over the apples, then remaining 1/4 cup into the bottom of baking dish. 7. Place dish in oven and bake for 30-35 minutes, or until stuffing has browned and apples are tender. 8. Remove from oven and serve hot.

Tips:

  • Choose firm, tart apples. Granny Smith, Honeycrisp, and Braeburn are all good choices.
  • Core the apples, but leave the skin on. This will help the apples hold their shape while baking.
  • Fill the apples with a variety of fillings. Popular fillings include brown sugar, cinnamon, granola, nuts, and dried fruits.
  • Bake the apples at a high temperature for a short amount of time. This will help the apples caramelize and develop a crispy skin.
  • Serve the apples warm or at room temperature. They can be enjoyed on their own or with a dollop of whipped cream or ice cream.

Conclusion:

Baked apples are a delicious and versatile dessert that can be enjoyed all year long. With their endless filling possibilities, they can be tailored to any taste. Whether you like them sweet, tart, or somewhere in between, there's a baked apple recipe out there for you.
