Tips:

  • Selecting the Right Pork Roast: Choose a pork loin roast or pork shoulder roast for this recipe. Pork loin is leaner and cooks faster, while pork shoulder is fattier and has more flavor.
  • Preparing the Mustard Rub: Combine Dijon mustard, olive oil, garlic, thyme, rosemary, salt, and pepper in a small bowl. The mustard rub adds a tangy and flavorful crust to the pork roast.
  • Scoring the Pork Roast: Use a sharp knife to score the top of the pork roast in a diamond pattern. This helps the rub penetrate the meat and creates a crispy crust.
  • Cooking the Pork Roast: Place the pork roast in a roasting pan and cook in a preheated oven at 325°F (165°C) for 2-3 hours, or until the internal temperature reaches 145°F (63°C).
  • Resting the Pork Roast: Once the pork roast is cooked, remove it from the oven and let it rest for 15-20 minutes before slicing. This allows the juices to redistribute throughout the meat, resulting in a tender and flavorful roast.

Conclusion:

This savory mustard pork roast is a delicious and easy-to-make dish that is perfect for a family dinner or special occasion. The mustard rub creates a tangy and flavorful crust, while the pork roast remains tender and juicy on the inside. Serve the roast with your favorite sides, such as roasted potatoes, green beans, or mashed cauliflower. Enjoy!
