SPINACH 'N ONIONS
Nice way to serve spinach and so good for you! The secret is not to overcook the spinach. I like to add a few roasted pine nuts or pumkin seeds with a nice jolt of Marsala wine. I love to serve this recipe with recipe#399309. Just spoon the sauce over the spinach when it is on the plate MMMmm

ROASTED ONIONS, POTATOES, AND SPINACH
This is one of my favorite side dishes, from an issue of the Vegetarian Times. I vary the herbs almost every time I make it, but have posted it as written here. Preparation and cooking times are estimates, sometimes the vegetables seem to cook faster. Just be sure not to overcook the spinach! :)

Steps:
- Heat the olive oil in the 2.5-quart saucepan over medium-high heat. Add the rosemary sprigs and fry until fragrant and the leaves are crisp, 1 minute. Using tongs, remove the rosemary and transfer to paper towels to drain. If any leaves are left behind in the oil, remove with a slotted spoon and transfer to the paper towels as well.
- Return the pan with the oil to medium heat. Add the onions and cook, stirring occasionally, until soft and caramelized, 20-25 minutes.
- Add the garlic and cook for 1 minute, until fragrant.
- Stir in the spinach and cook for 2 minutes to evaporate any excess moisture. Add the cream cheese and cook, stirring, until completely melted and incorporated into the onions and spinach.
- Remove the pan from the heat and stir in the sour cream, mayonnaise, lemon zest, salt, pepper, and lemon juice. Let cool to room temperature or cover with plastic wrap and refrigerate for up to 2 days.
- Remove the rosemary leaves from the stems over a cutting board. Crush with your fingers or finely chop with a knife.
- Transfer the dip to a serving dish and smooth the top. Sprinkle with the fried rosemary and serve with pita chips, toasted bread, or crudités.
- Enjoy!

Tips:
- Choose fresh, high-quality ingredients: Use fresh spinach with vibrant green leaves and crisp onions for the best flavor and texture.
- Don't overcrowd the pan: When sautéing the onions, make sure to use a large enough pan so that the onions have room to caramelize properly. Overcrowding the pan will prevent the onions from browning evenly.
- Cook the onions slowly: Caramelizing onions takes time, so be patient and cook them over medium-low heat. Rushing the process will result in undercooked onions that lack flavor.
- Use a variety of spices: Don't be afraid to experiment with different spices and herbs to flavor the onions and spinach. Some popular options include garlic powder, onion powder, paprika, cumin, and chili powder.
- Serve immediately: Savory onions and spinach are best served immediately after cooking. This dish can be enjoyed as a side dish, a main course, or as part of a breakfast scramble.
Conclusion:
Savory onions and spinach is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. With its simple ingredients and easy-to-follow steps, this recipe is a great option for home cooks of all skill levels. So next time you're looking for a quick and tasty meal, give savory onions and spinach a try - you won't be disappointed!
