- Thinly slice 6 Yukon potatoes (we used a mandoline for an even consistent cut).
- In a saucepan, melt butter on medium heat. Add in flour and whisk until smooth. Add bay leaf and begin to add the Almond Breeze while constantly stirring with a whisk. - Place potatoes on baking sheet and bake until just softened, about 1 hour. Allow to cool for 15 minutes.
- Slice off 1/2 inch lengthwise from tops of potatoes. Scoop out pulp, leaving 1/4 inch thick shells. Reserve 4 shells; discard remaining 2. Mash pulp.
- In a small skillet, melt butter over medium heat. Add onion; cook until softened, about 8 minutes. Add brown sugar, zest, salt, cumin, cinnamon, pepper and allspice. Cook until sugar melts, about 2-3 minutes.

- Preheat oven to 400 degrees. Place the sweet potatoes on a parchment-lined baking sheet; bake until tender when pierced with a paring knife, about 45 minutes. Remove from oven; let cool slightly.
- Line a rimmed baking sheet with foil; fit with a wire rack. Arrange bacon strips on rack, and sprinkle with brown sugar. Cook until well glazed and crisp, 12 to 15 minutes. Remove from oven; let cool slightly, and roughly chop. Set aside.
- Melt 1 tablespoon butter in a small skillet over medium heat. Add shallots; saute until soft and fragrant, about 2 minutes. Add rosemary, and cook 1 minute more. Remove from heat, and set aside.
- Slice each potato in half lengthwise. Carefully scoop out flesh, leaving about a 1/4-inch border all around potato halves; set halves aside on a baking sheet.

A favorite ... This came from a little cook book a girlfriend sent me for a Christmas present one year. Now I added my twist, but basically, this was the recipe. A one dish wonder. Now I love swiss chard and kale and I think they are way under used, so I absolutely love this dish. Now the original dish didn't have potatoes, but I love to add some sliced new potatoes to this dish and it makes it a complete dish. Add some fresh homemade or a good bakery loaf of pumpernickel and roasted peaches over vanilla ice cream for desert.

- Casserole -- First remove the pork chops from the refrigerator and let them come to room temperature. Brush well with 1 tablespoon olive oil and then season well with salt, pepper and paprika on both sides.
- Next, spray the casserole dish with a non stick spray and add the swiss chard and top with the sliced onions. Add some salt and pepper and drizzle with olive oil (1 tablespoon). Lightly toss. Then top with the chicken broth and the 4 pork chops.
- NOTE: If you want you could pan sear the pork chops first if you want as one reviewer mentioned, but I don't. But if would give a nice color to the chops if you prefer.
- Cheese -- Sprinkle the cheeses on top of the swiss chard and onions, around the pork chops.
- Potatoes -- In a small bowl add the potatoes, remaining olive oil, salt, pepper and dried thyme and then add them on top of the swiss chard and cheese around the pork chops.
- Bake -- 400 degrees for 20-30 minutes until the chops are done.
- Garnish -- I love to put a good balsamic vinegar on the table so each person can just drizzle a little on if they want. For me the flavor is amazing.

- 1. Preheat oven to 350 degrees (f). * or grill
- 2. Fine dice the onion and carrot and set aside. You may use a food processor for this if you want to.
- 3. Cut sausage about 1/2 in. - 3/4 inch slices . Set aside.
- 4. Cut potatoes into 1- 1 1/2 inch cubes. Set aside. (sometimes I will cut the potatoes while I'm browning the sausage)
- 5. Heat large pot. Add olive oil then brown sausage. Remove from pot with a slotted spoon and set aside. You want to leave as much oil as possible in the pot.
- 6. Add the diced carrot and onion to the pot and cook for just a minute.
- 7. Now add back the sausage and add potatoes, along with the garlic powder, celery seed, parsley and salt and pepper. Give it a good mix then add the flour and stir to coat everything.
- 8. Add chicken stock and stir well remembering to scrape the bottom to loosen the yummy bits. Spray a 9x13 in. baking dish . Pour mixture into the pan,cover with foil and bake for 40 minutes to an hour or till potatoes are tender. Let sit for 5 minutes so the liquid will thicken before serving.
- 9. * You can skip the oven all together and put it on the grill or smoker. Keep it over indirect heat. Check it and give it a stir every so often.... Very good !
EASY AND SAVORY BOILED POTATOES
This can't get any easier, and is a nice side dish, but be forewarned that the potatoes will be tender but a little dry. I like as is, but some do pour olive oil over the potatoes.

- Peel the potatoes, cut them into quarters then cook in boiling, salted water until they are fork tender.
- While the potatoes boil, cook the bacon until crisp, drain on paper towels and chop into small pieces.
- Drain the potatoes and then return them to the cooking pan. Turn the heat to low and allow the potatoes to sit in the pan until all of the visible moisture has evaporated (about 2 minutes), then remove them from the heat.

- 2. Peel potatoes.
- 3. Cut in half lengthwise and slice potatoes.
