The meat filling is very flavorful, with ketchup giving it sweetness and complexity. Instead of peppers, you can make porcupine meatballs or stuffed tomatoes.

Time 2h10m

Yield 12 stuffed pepper halves, 6 serving(s)

Number Of Ingredients 12

6 green bell peppers, halved and seeded
3 lbs ground beef (not lean)
1/2 cup long grain white rice
1 medium onion, chopped finely
1 celery rib, chopped finely (with leaves, if any)
3 garlic cloves, crushed
3 tablespoons parsley, chopped
1/2 teaspoon salt (or more, to taste)
1/2 teaspoon ground black pepper (or more)
1/4 teaspoon cayenne (or more)
1 cup ketchup
2 cups chicken broth

Steps:

  • Pour boiling water over rice and soak the rice for 30 minutes (or longer).
  • Mix all ingredients from beef to cayenne, plus 1/2 cup ketchup.
  • Stuff the pepper halves with the mixture.
  • Put the stuffed peppers into an oven-safe deep pan with a tight-fitting lid. Pour chicken broth, remaining 1/2 cup ketchup, and water over the peppers. You should attempt to cover as much of the peppers as possible, but if you cannot cover them completely, it is OK - the tops of the peppers will steam.
  • Cover and cook in the oven on 450 F until liquid boils. Then reduce heat to 325 F and cook 1.5 hours, or until the exposed rice on the top of the peppers is cooked. (You can also make it on the stove top, by first heating it till water boils and then reducing heat to medium, but you have to be careful not to burn the bottoms of the peppers.).

Tips:

  • Choose the right bell peppers: Look for bell peppers that are firm, brightly colored, and free of blemishes. Avoid peppers that are soft, wrinkled, or have brown spots.
  • Prepare the bell peppers properly: Cut the tops off the peppers and remove the seeds and ribs. Rinse the peppers thoroughly and pat them dry.
  • Use a variety of fillings: There are endless possibilities for fillings, so get creative! Some popular options include ground beef, rice, beans, vegetables, and cheese.
  • Season the fillings well: Don't be afraid to use plenty of herbs and spices to flavor the fillings. This is what will really make your stuffed bell peppers stand out.
  • Cook the stuffed bell peppers thoroughly: The cooking time will vary depending on the fillings you use, but a good rule of thumb is to bake them at 350°F for 30-40 minutes, or until the peppers are tender and the filling is cooked through.
  • Top with your favorite toppings: Before serving, top the stuffed bell peppers with your favorite toppings, such as cheese, sour cream, salsa, or guacamole.

Conclusion:

Stuffed bell peppers are a delicious and versatile dish that can be enjoyed for lunch, dinner, or even as a snack. They're also a great way to get your daily dose of fruits and vegetables. With so many different variations to choose from, there's sure to be a stuffed bell pepper recipe that everyone will love.
