SAVORY OVEN-ROASTED TURNIPS

Savory Oven-Roasted Turnips image

I have long made oven-roasted red-skin potatoes, sweet potatoes, and carrots in much this same way, but recently discovered that I can almost *ALMOST* fool myself into thinking I am eating those yummy potatoes with these turnips...

Provided by under12parsecs

Categories     Vegetable

Time 1h

Yield 6-8 serving(s)

Number Of Ingredients 11

3 lbs turnips, peeled, quartered and thinly sliced (1/8th in)
1 small yellow sweet onion, thinly sliced (such as maui or walla walla)
2 -4 garlic cloves, minced (I use 4 (or more)
butter-flavored cooking spray
2 teaspoons dried basil
2 teaspoons dried thyme
2 teaspoons dried parsley
1 teaspoon dried oregano
1 teaspoon dried rosemary
1/2 teaspoon red pepper flakes (can leave out if you don't like heat)
kosher salt and pepper

Steps:

  • Preheat oven to 450*.
  • In a high-sided 13x9 in pan (I use an old metal one because I find it gives me the best caramelization on the turnips/onions), combine turnips, onions, and garlic. Spray generously with cooking spray and toss. You could also use olive oil.
  • Add all seasonings. I usually start with about 2 tsp of salt and 1/2 tsp of black pepper and then taste them each time I stir and adjust those seasonings to taste, but I am a salt-fiend : }.
  • Bake for 15 minutes, then remove from oven and stir to allow the veggies to cook evenly. (I taste for seasoning at this point.)
  • Return to oven and bake another 15 minutes. Remove and stir again. Depending on how you like your turnips and how thick you sliced them, they may be done at this point. I like mine pretty well done and with some nice caramelization so I return them to the oven and bake an additional 10-15 minutes.

GARY'S SAVORY TURNIP GREENS

Gary's Savory Turnip Greens image

I used to hate turnip greens until I tried my DH's recipe...This is it! It's really good, and I can honestly say that even the kids eat this one. It's a Must Try, honestly...Sounds odd, but the flavors really mix together to taste addicting! I've even been known to add 2 strips of bacon crumbled and the grease as well...

Yield 4 servings

Number Of Ingredients 10

2 cups bonito flakes
½ cup sugar
½ cup usukuchi (light) soy sauce
¼ cup mirin (sweet Japanese rice wine)
1 Tbsp. ichimi togarashi
Zest and juice of 4 Meyer lemons or regular lemons (about ½ cup juice)
2 bunches hakurei turnips with tops
2 Tbsp. vegetable oil
Kosher salt
Toasted sesame seeds (for serving)

Steps:

  • Preheat oven to 425°F. Grind bonito flakes in a spice mill or blender until finely ground (you should have about 2 Tbsp.). Bring ground bonito, sugar, soy sauce, mirin, and togarashi to a boil in a medium saucepan. Reduce heat to medium and simmer, stirring often, until reduced by a third, 12-15 minutes. Pour dressing into a small bowl; cover and chill until cold, at least 30 minutes and up to 3 days. Stir in lemon zest and juice.
  • Meanwhile, separate tops from turnips. Trim stems from leaves; discard. Coarsely chop leaves. Cut turnips into 1" wedges. Toss turnips and leaves with oil on a rimmed baking sheet; season lightly with salt (the dressing is salty). Roast, tossing halfway through, until leaves are wilted and turnips have taken on a touch of color, 12-15 minutes.
  • Transfer turnips and leaves to a platter; spoon some of the dressing over (you'll have extra). Sprinkle with sesame seeds.

SAVORY TURNIP DIP

Savory Turnip Dip image

I stumbled upon this recipe when I was both desperate for some dip and looking for a way to use up some frozen turnip greens I had in the freezer. I am not normally a huge turnip fan, but this recipe is so incredibly delicious, I even prefer it to spinach dip. I make this recipe with beef soujouk (beef sausage) from the Middle Eastern foods store instead of bacon because of a pork allergy, but it tastes great either way.

Time 39m

Yield 8

Number Of Ingredients 10

6 slices bacon, diced
½ small onion, diced
3 cloves garlic, minced
¼ cup tarragon vinegar
1 (12 ounce) package chopped frozen turnip greens
3 (4 ounce) packages cream cheese
1 (8 ounce) container sour cream
¾ cup grated Parmesan cheese
½ teaspoon paprika
¼ teaspoon salt

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until some of the fat is rendered, about 5 minutes. Add onion and garlic; cook and stir until fragrant, 2 to 3 minutes. Pour in tarragon vinegar; cook for 2 minutes.
  • Place turnip greens in a large saucepan over medium heat. Cook and stir until tender, 5 to 10 minutes. Stir in bacon mixture. Add cream cheese, sour cream, Parmesan cheese, paprika, and salt. Cook over medium-low heat, stirring occasionally, until creamy and heated through, about 15 minutes.

Tips:

  • Choose the right turnips: Look for turnips that are small and firm, with smooth skin and no bruises. Avoid turnips that are large or have blemishes, as these may be woody or bitter.
  • Wash and peel the turnips: Before cooking, thoroughly wash the turnips and peel off the skin. Use a sharp knife to remove the skin thinly to avoid wasting any of the turnip's flesh.
  • Roast the turnips: Roasting brings out the natural sweetness of turnips. Cut the turnips into wedges or cubes and toss them with olive oil, salt, and pepper. Roast in a preheated oven at 425°F (220°C) for 20-25 minutes, or until caramelized and tender.
  • Boil or steam the turnips: Boiling or steaming are other simple ways to cook turnips. Place the turnips in a pot of boiling water or a steamer basket and cook until tender, about 10-15 minutes. Drain the turnips and mash them with a fork or potato masher.
  • Season the turnips: Turnips can be seasoned in a variety of ways. Try adding herbs such as thyme, rosemary, or sage, or spices such as cumin, coriander, or paprika. You can also add cheese, nuts, or seeds for extra flavor and texture.

Conclusion:

Turnips are a versatile and delicious vegetable that can be enjoyed in many different ways. Whether you roast them, boil them, or steam them, turnips are a healthy and flavorful addition to any meal. So next time you're looking for a new vegetable to try, give turnips a chance. You may be surprised at how much you enjoy them!
