Add the mushrooms and cook until soft, about 3 minutes more. Add the bok choy and carrots and cook until the bok choy is wilted, 2-3 minutes. Season with the salt.
  • Return the shrimp to the pan and add the sweet ginger chili sauce, tossing to combine.
  • Divide the stir fry between 2 bowls and garnish with the peanuts and thinly sliced scallions. Serve immediately.

Tips:

  • Choose fresh, high-quality ingredients: The fresher the ingredients, the better the marinade will taste. Look for scallions, ginger, and garlic that are firm and brightly colored.
  • Use a sharp knife to finely chop the ingredients: This will help the flavors to infuse the meat or vegetables more easily.
  • Let the marinade sit for at least 30 minutes, or up to overnight: The longer the marinade sits, the more time the flavors have to penetrate the food.
  • Use the marinade as a basting sauce: Basting the food with the marinade while it cooks will help to keep it moist and flavorful.
  • Save any leftover marinade to use as a dipping sauce: This is a great way to add extra flavor to your meal.

Conclusion:

This versatile scallion-ginger-garlic marinade is a great way to add flavor to your favorite dishes. Whether you're marinating chicken, beef, pork, seafood, or vegetables, this marinade will help to create a delicious and memorable meal. So next time you're looking for a flavorful marinade, give this one a try. You won't be disappointed!
