SCALLOPED CORN CASSEROLE (SHIRLEY STYLE)
Number Of Ingredients 10
Steps:
- 1. Preheat oven to 350. Combine chopped celery, onions, cheese, cracker crumbs, salt and butter. 2. When ready to bake, add cream corn, eggs and milk. Stir to combine. 3. Spray casserole dish, if desired. Pour casserole mixture into dish and top with paprika. Bake for 50 min at ~350. (I sometimes find I need an extra ~5-10 minutes for the desired crispy top.
Tips:
- To achieve a creamy casserole, use heavy cream or whole milk. For a lighter version, use skim milk or low-fat milk.
- For a more flavorful casserole, use fresh corn kernels. If using frozen corn, thaw it completely before using.
- Add some chopped fresh herbs, such as parsley, thyme, or chives, to the casserole for extra flavor.
- To make the casserole extra cheesy, use a combination of cheddar cheese, Parmesan cheese, and Monterey Jack cheese.
- For a crispy topping, sprinkle some bread crumbs or crushed crackers on top of the casserole before baking.
- Bake the casserole until it is golden brown and bubbly. The internal temperature should reach 165°F (74°C).
