Categories     Potato     Side     Bake

Yield 6-8 servings

Number Of Ingredients 10

2 cloves garlic, smashed
3 tablespoons unsalted butter
3 pounds waxy potatoes (such as Yukon gold or Yellow Finn), peeled
3 cups half-and-half
1/2 cup creme fraeche
2 tablespoons all-purpose flour
2 teaspoons chopped fresh thyme
1/8 to 1/4 teaspoon ground mace
Kosher salt and freshly ground pepper
1/4 cup chopped chives

Steps:

  • Preheat the oven to 350 degrees. Rub the garlic all over the inside of a 3-quart baking dish, then mince it. Grease the dish with about 1/2 tablespoon butter. Slice the potatoes about 1/8 inch thick (a mandoline works well). Combine in a large saucepan with the minced garlic, the remaining 2 1/2 tablespoons butter, the half-and-half, creme fraeche, flour, thyme, mace, 2 1/2 teaspoons salt, and pepper to taste. Bring to a boil over medium-high heat and cook, stirring, until the mixture thickens slightly, 1 to 2 minutes. Stir in the chives and transfer the mixture to the prepared baking dish, shaking it to distribute the potatoes evenly. Bake, uncovered, until the potatoes are fork-tender, about 1 hour 5 minutes, occasionally spooning some of the liquid over the top. Let cool 10 minutes before serving. You can also make the scalloped potatoes in individual ramekins; bake about 40 minutes

SCALLOPED POTATOES WITH HEAVY CREAM AND CHEESE

Scalloped Potatoes With Heavy Cream and Cheese image

Julia Child Rules!!! "Gratin Jurassien" Named for the Juras region in Switzerland. A mainly Francophone region in the Jura mountains that border France. Use more cheese if you want to, it won't hurt, especially on the top of the casserole. This is filling and rich and goes wonderfully with beef, pork, lamb, pretty much anything. It also freezes and reheats nicely. You can also saute pearl onions in butter and put them in amongst the potatoes and cheese. An afterthought: try to get waxy potatoes, like reds or golds, to make sure that the slices don't turn to mush when absorbing the cream. (and that should be emmenthal cheese, but I can't get it to correct. Sorry.)

POTATO GRATIN WITH GRUYERE CHEESE AND CREME FRAICHE

Potato Gratin With Gruyere Cheese and Creme Fraiche image

This recipe is originally from an issue of Bon Apetit. It's very rich and makes a great side dish for a special meal. If you have a Cuisinart, use it, it will make the recipe a snap by eliminating the tedious slicing of the potatoes. Make sure to use a high quality of Gruyere cheese, some are very oily. I use Boar's Head here at home. Also make sure to stick to the amount of cheese listed as too much will make the dish greasy - even if you do use a high quality cheese.

150ml semi-skimmed milk
1 plump garlic clove, peeled and halved
4 thyme sprigs, plus extra for sprinkling
1 bay leaf
1 shallot, roughly chopped
good pinch freshly grated nutmeg
1kg waxy potatoes (try Desirée)

75ml vegetable stock (Marigold bouillon)
1 tsp thyme leaves

Tips:

  • For the best results, use Yukon Gold or russet potatoes, as they hold their shape well during cooking.
  • Slice the potatoes thinly and evenly so that they cook evenly.
  • Use a baking dish that is large enough to accommodate the potatoes in a single layer.
  • Do not overcrowd the baking dish, or the potatoes will not cook evenly.
  • Season the potatoes generously with salt and pepper, and add other seasonings, such as garlic powder or onion powder, to taste. You can also sprinkle some freshly chopped herbs, such as thyme or rosemary, on top of the potatoes before baking.
  • Pour the sauce over the potatoes, making sure to coat them evenly.
  • Bake the potatoes in a preheated oven until they are tender and the sauce is bubbly.
  • Let the potatoes rest for a few minutes before serving so that the sauce can thicken slightly.
