1 head garlic
4 tablespoons unsalted butter
1 pound frozen large deveined, shell-on shrimp, thawed
2 tablespoons rice flour
1 tablespoon paprika
1 teaspoon cayenne pepper
1 ½ teaspoons kosher salt
2 tablespoons olive oil

Tips:

  • Mise en Place: Prepare all ingredients and have them ready before you start cooking to ensure a smooth and efficient cooking process.
  • Fresh Ingredients: Use the freshest seafood, vegetables, and herbs for the best flavor and texture. Look for seafood that is firm and has a mild, briny smell.
  • Properly Clean the Shrimp: Devein and shell the shrimp to remove any impurities and ensure a clean, tender bite.
  • Don't Overcook the Shrimp: Cook the shrimp just until they turn opaque and pink, about 2-3 minutes. Overcooking will make them tough and rubbery.
  • Make the Sauce in Advance: Prepare the Rockefeller sauce ahead of time to allow the flavors to meld and develop. This will enhance the richness and complexity of the dish.
  • Use a Variety of Vegetables: Incorporate a variety of vegetables such as spinach, mushrooms, and bell peppers to add color, texture, and nutrients to the dish.
  • Garnish Before Serving: Garnish the scampi Rockefeller with fresh herbs like parsley, chives, or dill to enhance the presentation and add an extra layer of flavor.
