6 egg whites
1/4 teaspoon cream of tartar
2 cups sugar
1 teaspoon vanilla extract
1 teaspoon white vinegar
1 pint vanilla ice cream
1 pint fresh strawberries, hulled, sliced and sweetened
1 cup heavy whipping cream, whipped

Steps:

  • Place egg whites in a large bowl; let stand at room temperature for 30 minutes. Beat egg whites until foamy. Add cream of tartar; continue beating until soft peaks form. Gradually add sugar, 1 tablespoon at a time, beating until mixture is stiff and glossy. Add vanilla and vinegar; mix well. Spread batter in a greased 10-in. springform pan., Bake at 275° for 1 hour. Turn oven off; let torte cool in oven. With a sharp knife, cut around edges of pan; turn torte onto a platter. Serve with ice cream, strawberries and whipped cream.

5 egg whites
1 tsp of white vinegar
1 cup of castor sugar
1/2 tsp of cream of tartar
1 tsp of vanilla extract
1 cup of liquid cream
1/3 cup of powdered sugar
1/2 tsp of cream of tartar

Steps:

  • Preheat the oven to 350°F (180°C).
  • Pour the egg whites and vinegar into the bowl of your stand mixer and mix with the whisk on high speed until soft peaks form, about 4-5 minutes.
  • Add the sugar, little by little, while mixing on high sped until the mixture forms stiff peaks, about 2 minutes.
  • Add the cream of tartar and vanilla extract and mix for a minute.
  • Spread the meringue on a baking sheet, creating 8 circles (2 1/2 inches each) with the sides higher than the middle, like 8 little nests.
  • Put in the oven and reduce the heat to 200°F (95°C).
  • Bake for 1h30. Make sure not to open the oven while baking.
  • Turn the oven off and leave it open ajar.
  • Meanwhile, put the liquid cream in the freezer for 30 minutes.
  • Pour the cream into the bowl of your stand mixer and mix using the whisk until it become fluffy (mix on medium speed for 2 minutes, then increase the speed every 30 seconds until you reach maximum speed).
  • Add the powdered sugar, little by little, while mixing.
  • Add the cream of tartar while mixing.
  • Continue to mix until the cream is well whipped and you can turn the bowl upside down without the cream spilling out from the bowl.
  • Refrigerate until the meringues are lukewarm.

3 egg whites
1/4 teaspoon cream of tartar
3/4 cup sugar
3/4 cup sugar
3 tablespoons cornstarch
1/4 teaspoon salt
3/4 cup water
3 egg yolks, slightly beaten
1 tablespoon butter or margarine
1 teaspoon grated lemon peel
1/3 cup lemon juice
1 cup whipping cream

Steps:

  • Heat oven to 275°F. Line cookie sheet with cooking parchment paper or heavy brown paper. In medium bowl, beat egg whites and cream of tartar with electric mixer on high speed until foamy. Beat in 3/4 cup sugar, 1 tablespoon at a time; continue beating until stiff peaks form and mixture is glossy. Do not underbeat. On cookie sheet, shape meringue into 9-inch round with back of spoon, building up side.
  • Bake 1 hour 30 minutes. Turn off oven; leave meringue in oven with door closed 1 hour. Finish cooling at room temperature, about 2 hours.
  • In 2-quart saucepan, mix 3/4 cup sugar, the cornstarch and salt. Gradually stir in water. Cook over medium heat, stirring constantly, until mixture thickens and boils. Boil and stir 1 minute. Gradually stir at least half of the hot mixture into egg yolks; stir back into hot mixture in saucepan. Boil and stir 1 minute; remove from heat.
  • Stir in butter, lemon peel and lemon juice. Press plastic wrap onto surface to keep it from drying out. Cool to room temperature. Spoon into meringue shell. Cover and refrigerate at least 12 hours but no longer than 24 hours.
  • In chilled medium bowl, beat whipping cream with electric mixer on high speed until soft peaks form. Spread over filling. Refrigerate until serving. Store in refrigerator.

1 (10 ounce) package frozen sweetened strawberries, thawed

  • Preheat oven to 250 degrees F (120 degrees C). Butter a large baking sheet or line it with parchment paper.

  • Preheat oven to 300° Beat eggs into stiff peaks. Beat in sugar 2 tablespoons at a time, 5 times beating thoroughly each time.. Then add vanilla & vinegar then rest of sugar. Butter bottom and sides of pan; add 2/3 of mixture into pan. 2 teaspoons vinegar
