2 cans Spam, diced in cube (lite if desire)
1/2 chopped onion
3 -4 cloves garlic (minced)
1 (15 ounce) can tomato sauce
1 (14 ounce) can del monte beans or 1 (14 ounce) can del monte peas
1 dash black pepper
2 tablespoons oil

Steps:

  • in a sauce pan, med heat, brown onions and garlic in 2 tablespoon oil, add spam and brown lightly add tomato sauce and cut bean, dash of black pepper and let simmer for about 2 minutes.
  • Turn off heat and serve.
  • Delicious with steam white rice.

¼ cup spicy brown mustard
8 slices whole wheat bread
1 (12 ounce) can fully cooked luncheon meat (such as SPAM®), cut into 1/4 inch slices
8 slices Cheddar cheese
2 large tomatoes, cut into 1/2-inch slices
1 sweet onion, thinly sliced
¼ cup softened butter

Steps:

  • Spread the mustard onto one side of each of the bread slices. Place the luncheon meat onto half of the bread slices, then top each with 2 slices of Cheddar cheese, sliced tomato, and onion. Place the remaining bread slices, mustard-side-down onto the onions. Spread butter evenly onto the outside of each sandwich.
  • Heat a large skillet over medium-low heat. Place the sandwiches into the skillet, and cook until they are golden brown, then flip the sandwiches over, and continue cooking until golden brown and crispy on the other side, about 6 minutes per side. Allow the sandwiches to cool slightly before serving.

1 cup white rice
1 can SPAM, diced into small squares
1 medium onion, diced
1 can Hunts tomato sauce

Steps:

  • Bring to boil the water. Then stir in rice. Reduce heat to simmer. Let simmer 20-30 min. till rice is done.
  • While the rice is cooking, add the SPAM and onion together in a large skillet sprayed with non-stick cooking spray and saute until the SPAM is browned. Add the can of Hunts tomato sauce to the SPAM and onions, let simmer till slight boil.
  • Spoon SPAM and tomato sauce mixture over rice and serve. You can top with cheese or a spoonful of mayonnaise to jazz it up a little if you like.

1 cup celery, chopped

1 (12 ounce) can Spam, cubed
1 (10 ounce) can cream of celery soup
1 (15 ounce) can diced tomatoes, undrained
1/2 teaspoon thyme
1/2 teaspoon onion powder
1/4 teaspoon dried celery flakes
1/2 teaspoon salt
1 (8 ounce) can tomato sauce
