Seared Brussels sprouts are a delicious and healthy side dish that can be enjoyed year-round. Brussels sprouts are a cruciferous vegetable, which means they are related to broccoli, cauliflower, and kale. They are packed with nutrients, including fiber, vitamin C, and vitamin K. Searing Brussels sprouts brings out their natural sweetness and caramelizes the outer leaves, creating a slightly crispy texture. This simple but flavorful dish can be served as a side dish to a variety of main courses, or it can be enjoyed as a snack.

SEARED BRUSSELS SPROUTS

Seared Brussels Sprouts image

For delicious brussels sprouts, cook them in very hot oil. The cut side will sear, as will some of the leaves, resulting in a toasty, charred flavor that is irresistible, especially to children. Don't use an expensive olive oil for this dish. It should not have a strong flavor.

Time 15m

Yield Serves four to six

Number Of Ingredients 3

1 pound brussels sprouts
3 to 4 tablespoons olive oil
Salt and freshly ground pepper

Steps:

  • Trim the ends off the brussels sprouts, and cut in half lengthwise through the stem end.
  • Heat the oil in a large, heavy skillet, preferably cast iron, over medium-high heat. When the skillet is just short of smoking, place the brussels sprouts cut side down in the oil. SEARED AND ROASTED BRUSSELS SPROUTS WITH RED PEPPER AND MINT GREMOLATA

Seared and Roasted Brussels Sprouts With Red Pepper and Mint Gremolata image

Searing brussels sprouts in a hot cast iron pan was a revelation to me when I first began preparing them this way a few years ago. In this version, adapted from Momofuku's recipe for Roasted Brussels Sprouts With Fish Sauce Vinaigrette, as featured in Food52's upcoming book "Genius Recipes," I achieve the sear on the cut surface of the sprouts in the pan, finish them in a hot oven, then return them to the frying pan, where in the meantime I have cooked a sweet red pepper. The combo is

Time 25m

Yield Serves 4 to 6

Number Of Ingredients 7

1 1/2 pounds brussels sprouts, preferably small ones
4 tablespoons extra virgin olive oil
Salt
1 medium red bell pepper, diced
1 to 2 plump garlic cloves (to taste), minced
1 tablespoon finely chopped or grated lemon zest
1 to 2 tablespoons finely chopped mint (to taste)

Steps:

  • Trim brussels sprouts at the base, remove unattached leaves and set them aside. Cut in half and place in a large bowl. Toss with 1 tablespoon olive oil and season with salt.
  • Heat oven to 400 degrees. Line a sheet pan with parchment. Heat 2 tablespoons olive oil over medium-high heat in a large, heavy skillet (cast iron is ideal). Add as many brussels sprout halves as will fit in a single layer, cut side down, and sear until nicely browned, 3 to 5 minutes. Transfer to baking sheet, cut side down, and repeat with remaining sprouts if you could not fit them all in during the first round. Place baking sheet in oven and roast until sprouts are tender, another 10 minutes.
  • Meanwhile, heat remaining oil in pan over medium heat and add red pepper. Cook, stirring often, until tender, about 5 minutes. Add garlic and cook, stirring, until fragrant, 30 seconds to a minute. Add roasted brussels sprouts to pan, stir together and add lemon zest, mint and freshly ground pepper. Heat through, taste and adjust seasonings. Remove from heat and serve.
  • Optional garnish: After removing roasted brussels sprouts from oven turn heat down to 350 degrees and move rack to highest setting. Toss loose leaves you set aside with a little olive oil and salt and spread on baking sheet in a single layer. Roast on top shelf of oven for 15 minutes. Move to middle rack and roast another 2 to 3 minutes, until brown and crisp. Serve as garnish.

SAVORY THAI NOODLES WITH SEARED BRUSSELS SPROUTS

Savory Thai Noodles With Seared Brussels Sprouts image

Isa Chandra Moskowitz runs a vegan restaurant in Omaha, Neb., so she knows how to make plant-based food that meat-eaters will also like. This one-pot noodle dish, loosely based on pad Thai, has lively textures (like shredded brussels sprouts and chewy rice noodles) and super-satisfying flavors.

Categories     dinner, quick, weeknight, noodles, vegetables, main course

Time 30m

Yield 3 to 4 servings

Number Of Ingredients 17

1/3 cup tamari sauce
1/3 cup packed brown sugar
3 tablespoons white miso
3 tablespoons tomato paste
2 tablespoons tamarind concentrate
1 teaspoon red-pepper flakes
8 ounces Thai rice noodles
3 tablespoons plus 1 teaspoon coconut oil
1 bunch (6 to 8) scallions, trimmed
Kosher salt
8 ounces trimmed brussels sprouts, shredded or quartered
4 cloves garlic, minced
2 cups loosely packed cilantro leaves and thin stems
4 ounces mung bean sprouts (optional)
1/2 cup salted roasted peanuts, lightly cracked in a mortar or coarsely chopped
1 red chile, such as Fresno, thinly sliced (optional)
4 lime wedges, for serving

Steps:

  • Make the sauce: In a blender or bowl, combine all the ingredients and mix until smooth. It should be thick but pourable like barbecue sauce; add water as needed to thin it out.
  • Cook noodles for stir-frying according to the package directions; they should be slightly underdone. After draining, rinse well with cold water to stop the cooking. Toss noodles in 1 teaspoon coconut oil to prevent sticking.
  • Cut scallions: Thinly slice the white parts, and cut the pale and dark green parts into 1-inch lengths.
  • Heat a wok or large nonstick skillet over high. Add 2 tablespoons coconut oil and sprinkle in salt. Add brussels sprouts and sear, tossing occasionally, until browned and cooked through, about 5 minutes. Remove from the pan and set aside.
  • In the same pan over high heat, heat remaining 1 tablespoon coconut oil. Add scallions and cook, stirring often, just until wilted, about 2 minutes. Add garlic, stir, then pour in about half the sauce and stir until bubbling.
  • Add noodles and cook, tossing in the sauce until cooked through, about 2 minutes. Add the remaining sauce, cooked brussels sprouts, cilantro and bean sprouts, if using; toss to coat and heat through.
  • Divide among plates. Garnish with peanuts, chile and lime wedges (if using) and serve immediately.

Yield Makes 4 servings

Number Of Ingredients 11

10 ounces Brussels sprouts, trimmed and halved lengthwise
3 bacon slices (3 ounces), cut crosswise into 1/2-inch pieces
1 cup low-sodium chicken broth
1/4 cup plus 2 teaspoons water
1 1/2 tablespoons unsalted butter
1/4 teaspoon salt
Pinch of sugar
12 large sea scallops (1 1/4 pounds), tough muscle removed from side of each if necessary
2 teaspoons olive oil
3/4 teaspoon cornstarch
2 teaspoons fresh lemon juice

Steps:

  • Blanch Brussels sprouts in a 3- to 4-quart saucepan of boiling salted water , uncovered, 3 minutes, then drain.
  • Cook bacon in a 10-inch heavy skillet over moderate heat, turning over occasionally, until crisp. Transfer bacon with a slotted spoon to a small bowl and reserve bacon fat in another small bowl.
  • Add 1/4 cup broth and 1/4 cup water to skillet and bring to a simmer, scraping up any brown bits. Add butter, salt, sugar, a pinch of pepper, and Brussels sprouts and simmer, covered, 4 minutes. Remove lid and cook over moderately high heat, stirring occasionally, until all liquid is evaporated and Brussels sprouts are tender and golden brown, about 8 minutes more. Stir in bacon and remove from heat.
  • While Brussels sprouts are browning, pat scallops dry and season with salt and pepper. Heat oil with 2 teaspoons bacon fat in a 12-inch heavy skillet over moderately high heat until hot but not smoking, then sear scallops, turning over once, until golden brown and just cooked through, 4 to 6 minutes total. Transfer to a platter as cooked and keep warm, loosely covered with foil.
  • Pour off and discard any fat from skillet used to cook scallops. Add remaining 3/4 cup broth and simmer, stirring and scraping up any brown bits, 1 minute. Stir cornstarch into remaining 2 teaspoons water in a cup, then stir into sauce along with any scallop juices accumulated on platter. Simmer, stirring, 1 minute, then remove from heat and stir in lemon juice and salt and pepper to taste.
  • Serve Brussels sprouts topped with scallops and sauce.

SEARED SCALLOPS WITH PANCETTA AND BRUSSELS SPROUTS

SEARED SCALLOPS WITH PANCETTA AND BRUSSELS SPROUTS image

Number Of Ingredients 8

2 tablespoons olive oil, divided
¼ pound pancetta, cut into ½-inch cubes
1 medium shallot, thinly sliced (about 1/4 cup)
1 pound brussels sprouts, roughly chopped or shredded with a mandoline (about 6 cups)
Kosher salt and freshly ground black pepper
2 tablespoons rice wine vinegar
1 tablespoon unsalted butter
12 large scallops

Steps:

  • Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat until shimmering. Add pancetta and cook, stirring, until most of the fat is rendered and it begins to crisp, about 2 minutes. Add shallots and brussels sprouts, season with salt and pepper, and cook, stirring, until browned, about six minutes. Stir in vinegar, scraping up any brown bits, then transfer to a plate and set aside. Wipe out skillet with a paper towel. 2 Pat the scallops dry and season generously with salt and pepper. Return skillet to medium-high heat and add butter. Heat until foaming subsisdes, then add the scallops and allow to cook without moving until golden brown on first side, 2 to 3 minutes. Flip, return the brussels sprouts mixture to warm through and continue cooking until scallops are barely cooked through, about 2 minutes longer. Serve immediately.

Tips:

  • Choose small sprouts: Smaller Brussels sprouts are more tender and cook more evenly.
  • Trim the sprouts: Remove any yellow or wilted leaves and trim the stem end.
  • Slice the sprouts in half: This will help them cook more quickly and evenly.
  • Use a high-heat cooking method: Searing is a great way to cook Brussels sprouts because it creates a caramelized crust on the outside while keeping the inside tender.
  • Don't overcrowd the pan: When searing Brussels sprouts, it's important to give them enough space in the pan so that they can cook evenly.
  • Season the sprouts: Before cooking, season the Brussels sprouts with salt, pepper, and any other desired spices.
  • Cook the sprouts until they are tender: The sprouts should be tender when pierced with a fork, but still have a slight crunch.
  • Serve immediately: Seared Brussels sprouts are best served immediately after cooking.

Conclusion:

Seared Brussels sprouts are a delicious and healthy side dish that can be enjoyed by people of all ages. They are a good source of vitamins, minerals, and fiber, and they are also low in calories and fat. If you are looking for a new way to cook Brussels sprouts, give searing a try. You won't be disappointed!
