1 large egg, lightly beaten
2/3 cup 2% milk
1 cup shredded cheddar cheese
1 medium onion, finely chopped
1/2 cup finely shredded carrot
1 teaspoon salt
1/4 teaspoon pepper
1-1/2 pounds ground beef
GLAZE:
1/4 cup packed brown sugar
1/4 cup ketchup
1 tablespoon prepared mustard

Steps:

  • Preheat oven to 350°. Tear bread into 2-inch pieces; place in a blender. Cover and pulse to form coarse crumbs; transfer to a large bowl. Stir in egg, milk, cheese, onion, carrot, salt and pepper. Add beef; mix lightly but thoroughly. Transfer to a greased 9x5-in. loaf pan. , In a small bowl, mix glaze ingredients; spread over loaf. Bake 60-75 minutes or until a thermometer reads 160°. Let stand 10 minutes before slicing. Freeze option: Bake meat loaf without glaze. Securely wrap cooled meat loaf in foil, then freeze. To use, partially thaw meat loaf in refrigerator overnight. Prepare and spread glaze over top; reheat on a greased shallow baking pan in a preheated 350° oven until heated through and a thermometer inserted in center reads 165°.

2 tablespoons corn oil
2 cups onions (finely chopped)
1 tablespoon garlic (finely chopped or crushed fresh)
1/2 green pepper (chopped into 1/4-inch pieces)
7 slices bread
1 1/2 lbs ground beef
1/2 lb pork (ground)
1/2 lb veal (chopped)
2 eggs (beaten)
1/3 cup parsley (fresh, chopped fine)
1/2 teaspoon rosemary (fresh or dried crushed)
1/2 teaspoon thyme (fresh or dried)
1 tablespoon ketchup
1 1/2 teaspoons salt
1/8 teaspoon pepper (fresh ground black)

Steps:

  • Preheat oven to 350 degrees. Heat corn oil in a large skillet, and saute onions until light golden brown. Add garlic at the last minute, and brown quickly. Remove to a bowl with a slotted spoon, and saute green peppers in remaining oil. Add to bowl, and refrigerate.
  • Cut crusts off bread, cube and soften with water in a strainer. Squeeze out excess liquid.
  • In a large bowl, thoroughly blend meats and bread, working them together with your hands lightly. Add onion-garlic- green pepper mixture and all the other ingredients, Blend thoroughly.
  • Place mixture in a loaf pan and score a crisscross design along the top with a knife. Bake 50 minutes, pour off accumulated fat, add your favorite tomato sauce, and continue baking for 20 minutes more.

1 white onion diced
1 portobello cap diced
2 cups shiitake mushrooms, stemmed and julienne cut
2 pounds ground veal
2 eggs, beaten
1/2 cup chopped parsley
Salt and pepper to taste
1 cup bread crumbs

  • Preheat oven to 400 degrees. Saute onions and mushrooms until wilted and onions are tender. Let cool completely. Mix all ingredients together, adding bread crumbs a little at a time until desired consistency. Generously oil 1 meatloaf tray. Pack mix into tray tightly to keep holes from being created in the loaf. Cover the tray with aluminum foil. Transfer the meatloaf to a pan with high sides and filled 1/4 with water. Bake for 1 to 2 hours, checking for doneness after 1 hour. Let stand at room temperature before removing from the pan. Cool then cover.;

1 clove garlic, crushed with press
2 pounds lean ground turkey
3/4 cup fresh whole wheat breadcrumbs (from 1 1/2 slices bread)
1/3 cup fat-free milk
1 tablespoon Worcestershire sauce
1/2 cup ketchup
1/2 teaspoon salt
1/4 teaspoon coarsely ground black pepper
2 large egg whites
1 tablespoon Dijon mustard

Steps:

  • Preheat the oven to 350 degrees F.
  • In a 12-inch nonstick skillet, heat the oil over medium heat. Add the celery and onions and cook until tender, about 10 minutes, stirring occasionally. Add the garlic and cook 1 minute. Transfer the vegetables to a large bowl and cool slightly.
  • Add the turkey, breadcrumbs, milk, Worcestershire sauce, 1/4 cup ketchup, salt, pepper and egg whites to the vegetables. Mix with hands until well combined, but do not over mix. In a cup, combine the Dijon and remaining 1/4 cup ketchup.

  • Let the meat loaf stand10 minutes to set the juices for easier slicing before removing from the pan. Transfer the meat loaf to a platter and serve.

1/2 cup dry breadcrumbs
1 large egg

4 slices bacon, thick strips
1 teaspoon dried parsley
1/2 teaspoon oregano
1/2 teaspoon basil
1/2 teaspoon thyme
2 tablespoons dry bread, crumbs
1/2 onion, finely chopped
1 cup mozzarella cheese
1 (8 ounce) can tomato sauce

Steps:

  • Preheat oven to 375 degrees. Add water to mushroom juice to make 1 cup. Fry bacon until crispy, drain and crumble. Set aside.
  • Combine beef, 1/2 cup breadcrumbs, egg, mushroom juice, garlic powder and salt in a large bowl. Mix well. On wax paper, form meat mixture into a 8x12 inch rectangle.

¼ cup steak sauce, or more to taste

Steps:
