1/4 cup vegetable oil
3/4 cup popcorn kernels
1 stick (8 tablespoons) unsalted butter, melted
3/4 cup finely grated Parmesan
1 tablespoon dried Italian seasoning
Pinch crushed red pepper flakes
Seasoned salt, such as Lawry's
1/2 cup sugar
1 teaspoon ground cinnamon
Kosher salt
2 tablespoons caramel syrup, such as Monin's

Steps:

  • Put the oil in a large pot and add the popcorn kernels. Cover the pot with a tight-fitting lid and heat over medium heat. Once the popping starts, shake the pot occasionally until the popping subsides. Transfer the popcorn to 2 large bowls, divide the melted butter between them and toss to coat.
  • For the Parmesan herb popcorn: Combine the Parmesan, Italian seasoning, red pepper flakes and a sprinkle of seasoned salt in a small bowl. Sprinkle on top of 1 of the bowls of buttered popcorn and toss to coat. Makes: 15 cups
  • For the cinnamon sugar popcorn: Combine the sugar, cinnamon and salt in a small bowl. Sprinkle over the second bowl of buttered popcorn and toss to coat. Drizzle over the caramel syrup. Makes: 15 cups

16 cups popped popcorn, or more to taste
1 cup packed light brown sugar
½ cup butter
½ cup light corn syrup
16 drops green food coloring
1 teaspoon vanilla extract
½ teaspoon baking soda

Steps:

  • Preheat the oven to 250 degrees F (120 degrees C). Spread popcorn into 1 large or 2 smaller greased roasting pans.
  • Combine brown sugar, butter, corn syrup, and food coloring in a medium saucepan over medium heat. Stir constantly until boiling. Let boil undisturbed for 5 minutes. Remove from heat. Stir in vanilla extract and baking soda; mixture will foam up then subside.
  • Pour mixture over popcorn and stir until coated.
  • Bake in the preheated oven, stirring every 15 minutes, for 45 minutes. Stir popcorn as it cools to break it apart.

6 cups popped popcorn
2 cups Golden Grahams™ cereal
1/2 cup butter
1 1/2 cups packed brown sugar
1/4 cup light corn syrup
1/2 teaspoon salt
1/4 teaspoon baking soda
1/2 teaspoon vanilla
2 cups miniature marshmallows
2 cups miniature semisweet chocolate chips

Steps:

  • Heat oven to 250°F. In 13x9- or 15x10-inch pan, toss popcorn and cereal; set aside.
  • In large saucepan, melt butter over medium heat. Stir in brown sugar, corn syrup and salt. Heat to boiling; boil 5 minutes without stirring. Remove from heat; stir in baking soda and vanilla (be careful; mixture will foam). Pour over popcorn mixture; stir until well coated.
  • Bake uncovered 40 minutes, stirring every 10 minutes.
  • Sprinkle marshmallows over popcorn mixture. Broil 2 to 3 minutes or until marshmallows start to turn golden brown. Sprinkle chocolate chips over top and stir (mixture will be a bit gooey). Cool completely.

1 cup sugar
1/2 cup packed brown sugar
1/2 cup water
1/2 cup light corn syrup
1 teaspoon white vinegar

8 to 10 drops green food coloring
