1 tablespoon olive oil, plus more for greasing
1 large yellow onion, diced
3 cloves garlic, minced
2 tablespoons tomato paste
1 cup panko breadcrumbs
1 cup whole milk
2 lb ground beef

½ cup ketchup

Steps:

  • Preheat the oven to 350°F (180°C). Line a rimmed baking sheet with foil.

SHARON'S TO DIE FOR MEATLOAF

Sharon's To Die for Meatloaf image

This is my personal favorite and I have never had any complaints.

Provided by Sharon McGaha @skmcgaha

Categories     Beef

Number Of Ingredients 9

2 large eggs
1 package(s) lipton onion soup mix
1 pound(s) 80/20 hamburger meat
1 can(s) rotel original
1/2 package(s) crumbled ritz crackers
1/4 cup(s) ketchup
1 teaspoon(s) worcestershire sauce
1/2 cup(s) green bell pepper finely chopped
1/8 teaspoon(s) salt and pepper

Steps:

  • Heat oven to 350 degree
  • Combine all ingredients in bowl and spray meatloaf pan with cooking spray
  • place ingredients in pan and cook in the oven for 45 minutes to an hour or until you feel it is done. I cook until the center is not pink and I drain the fat half way through cooking. Do not let meatloaf sit in the grease after you take it out of the oven, remove from pan and drippings.
  • Serve with mashed potatoes, brown gravy and carrots or asparagus, or any other vegetable and cornbread. This recipe is to die for!
  • You can top with Ketchup or tomato sauce for the last 10 minutes of cooking if you prefer.

Tips:

  • Choose the Right Ground Beef: Opt for a blend of 80% lean and 20% fat ground beef for a moist and flavorful meatloaf. Higher fat content can lead to a greasy loaf, while lower fat content can result in a dry texture.
  • Use Quality Ingredients: Fresh herbs, aromatic vegetables, and flavorful seasonings elevate the taste of your meatloaf. Don't skimp on ingredients; use the best you can find for a truly exceptional dish.
  • Proper Mixing: Mix the meatloaf ingredients gently but thoroughly. Overmixing can result in a tough texture. Use your hands to combine the ingredients, ensuring even distribution of flavors and textures.
  • Shape and Bake: Form the meatloaf mixture into a loaf shape and place it in a baking pan. Bake at the recommended temperature and time, ensuring the internal temperature reaches a safe minimum of 160°F (71°C) for beef, as measured with a meat thermometer inserted into the center of the loaf.
  • Glaze or Sauce: Consider adding a glaze or sauce during the last 15-20 minutes of baking. This adds extra flavor and moisture to the meatloaf, creating a caramelized crust.
  • Rest Before Slicing: Allow the meatloaf to rest for at least 10 minutes before slicing. This helps the juices redistribute throughout the loaf, resulting in neater slices and preventing the meatloaf from falling apart.

Conclusion:

With careful selection of ingredients, proper mixing, and precise baking, you can create a delicious and satisfying meatloaf that will impress your family and friends. Experiment with different flavor combinations and techniques to find your perfect meatloaf recipe. Remember, cooking is an art form, and the best dishes are often the ones that come from the heart. So put on your apron, gather your ingredients, and let's get cooking!
