PASTA WITH WINTER SQUASH AND TOMATOES

Pasta With Winter Squash and Tomatoes image

If we're being truthful, this sweater weather recipe should really be called "winter squash and tomatoes with pasta," as the 2 pounds of squash far outweigh the 1/2 pound of penne it calls for. We think that's a good thing. Every single piece of pasta gets a generous coating of sauce, and there's even some left behind after the pasta is long gone. That's what bread is for.

Tips:

  • Choose the right squash: For this recipe, use a firm, dense squash like butternut or kabocha. These squashes hold their shape well when cooked.
  • Use a sharp knife: A sharp knife will make it easier to shave the squash into thin ribbons.
  • Don't overcrowd the pan: When cooking the squash, don't overcrowd the pan. This will prevent the squash from cooking evenly.
  • Cook the squash until it's tender: The squash should be tender but still have a slight bite to it. Don't overcook the squash, or it will become mushy.
  • Use fresh tomatoes: Fresh tomatoes will give the sauce the best flavor. If you don't have fresh tomatoes, you can use canned diced tomatoes.
  • Add some herbs: Herbs like basil, oregano, and thyme will add a lot of flavor to the sauce. You can also use dried herbs if you don't have fresh herbs on hand.
  • Use a good quality pasta: The pasta is the foundation of this dish, so use a good quality pasta that you enjoy. Whole wheat pasta or a pasta made with lentils or chickpeas is a healthy option.

Conclusion:

This shaved squash and tomato pasta is a delicious and easy-to-make dish that is perfect for a weeknight meal.
