This is probably my number one casserole dish that I always make. It is also a nice easy one-dish meal since you have your protein, veggies, and grains all in one.

2 onions
3 medium potatoes
1 lb hamburger, uncooked
1/2 cup uncooked white rice
1 cup celery, chopped
1 (10 ounce) can condensed tomato soup (plus a can filled with water)
salt
pepper

Steps:

  • Slice onions in the bottom of a baking dish. Add thinly sliced potatoes.
  • Over potatoes spread hamburger. Next add uncooked rice. top with a layer of chopped celery.
  • As each layer is added season with salt and pepper to taste.
  • Combine soup with an equal amount of water and pour over all.
  • Cover and bake for 2 hours at 350°F.

Another would be corned beef hash with an egg on top. Well, when I made both of these for my then future inlaws, they thought they were delicious. Understand, it never changed the way they cooked, thank goodness, because I love the English food too.

2 medium potatoes, thinly sliced
1 small onion, thinly sliced
1/2 cup celery, thinly sliced
1/4 cup raw long grain rice
1 lb raw lean hamburger
1 (15 ounce) can kidney beans, undrained
1 (10 ounce) can tomato soup, undiluted

Steps:

  • Heat the oven to 350F.
  • (Make sure to season well each layer up to the kidney bean with salt and pepper).
  • In a greased 2 quart casserole put all ingredients in order given (including the liquid in the kidney beans as well as a little water to rinse out the can) and "frost" the whole top with the tomato soup.
  • Cover with foil and bake for 2 hours. Take out of oven, uncover and let sit for 10 minutes.

1 cup chopped carrots
1 cup chopped celery
1 (10.75-ounce) can tomato soup
1 cup boiling water

Steps:

  • Gather the ingredients.
  • ​Butter a 2 1/2-quart baking dish. Preheat the oven to 300 F (150 C, Gas 2).
  • Heat the vegetable oil in a large skillet over medium heat. Cook the ground beef, stirring, until browned and no longer pink.

1 teaspoon salt
